INGREDIENTS
TO MAKE THE DOUGH:
- 1 ½ cups shredded mozzarella cheese
- Cream cheese, two tbsp
- almond flour, One cup
- 1 large egg
- ½ tsp. baking powder
- 1 tsp. vanilla extract
TO MAKE THE FILLING:
- ¾ cup fresh or frozen blueberries
- Lemon juice, 2 tablespoons A teaspoon of lemon zest
- 2 tbsp. powdered Erythritol ½ tsp. xanthan gum OPTIONAL GLAZE:
- Two tbsp. of Erythritol powder
- A teaspoon of lemon juice
- ½ tsp. almond milk

VANILLA ESSENCE:
- Vanilla essence is added to suppress the smell of eggs & sparks the flavor of the filling.
GLAZE:
- This glaze is not compulsory, but it gives a nice finish to our turnovers.
- It also adds a nice taste of sweet lemon glaze.
FATHEAD DOUGH BASE:
- We are using mozzarella cheese as the base of the fat-head dough. We can also use the part-skim and low-moisture cheese because it works well in the recipe, so always remember that while buying. It also gives the dough its characteristic stretch.
BLUEBERRIES:
- We made the turnovers with the fresh blueberries but if they are not in season, go for the frozen version of blueberries. You only need to defrost the blueberries & strain their excess water before using them in the filling.
CREAM CHEESE:
- Cream cheese provides the required softness & structure along with mozzarella cheese because we are using gluten-free flour while making the dough.
XANTHUM GUM:
- We add the xanthan gum in the filing to thicken the consistency and it also prevents the filing from getting leaked. KETO
FLOUR:
- In this recipe, we are using almond flour which is gluten-free in place of wheat flour. The almond flour should be made from the almonds without the skin. These skinless almonds will give you a smooth texture.
KETO SWEETENER:
- We use Erythritol powder to make this dessert because the powder sweetener dissolves easily, so it will be better to use in both filling & glaze.
EGG:
- We add the egg to the dough so it binds the dough & prevents it from cracking.
ZEST & JUICE OF LEMON:
- We add zest and juice to this dessert. The citrus present in the lemon juice and zest sparks up the flavor of the filling.
BAKING POWDER:
- We use baking powder in small amounts to add lightness & fluffiness to the dough.

INSTRUCTIONS:
- Put your oven to heat empty at 375 degrees F.
- Lay a baking sheet covered with paper(parchment) & keep it aside.
- Grab a saucepan(small) & include lemon zest & juice, blueberries, & sweetener(keto-powdered).
- Combine all the items well & put the pan(sauce) over the regular flame on the stove.
- Cook them till your berries are soft, around six minutes.
- At this point, mash half of the berries.
- Include xanthan gum in the last.
- Mix well & cook till it thickens.
- Then, turn off the stove & allow the blueberry filling to cool down.
- Meanwhile, include the cream cheese & mozzarella cheese in a bowl(microwave-safe).
- Run it in the microwave till the cheese melts with a pause every thirty seconds.
- Mix both the melted cheeses well once they are out of the microwave.
- Then include egg, almond flour, essence of vanilla, & baking powder.
- Now, start mixing & kneading the dough very well.
- Make eight portions(equal) of the dough(kneaded).
