Keto Lemon Meringue Pie is a lovely sweet & sour dessert. Usually, it is very high in carbs. This recipe gives it a low-carb/sugar-free transformation. So, it is a sweet gift for all diabetic patients & individuals following the keto diet. Keto Lemon Meringue Pie gets its classical finish from the creative design at the top. It becomes prominent once you brown the edges using a torch (culinary). It is a delightful & cooling dessert throughout the summer and is also gluten-free. INGREDIENTS:

PIE CRUST (KETO):

  • Melted butter, 1/4th cup
  • One and a half cup of flour (almond)
  • 1/4 teaspoon of salt
  • One-fourth cup keto sweetener (swerve)

FILLING:

  • Juice of lemon, 1/3rd cup
  • 1 cup + 2tbsps of water
  • Gelatin (grass-fed), 1 tablespoon
  • A cup of granulated sweetener (swerve)
  • 1/2 tsp of xantham gum
  • Lemon zest, 2 teaspoons
  • Three tbsps of butter
  • 1/4 tsp of salt
  • Yolks of egg (large), 4

MERINGUE:

  • Half tsp of vanilla
  • 4 whites of egg (large, room temperature)
  • 1/4th cup of swerve sweetener (powdered)
  • Cream of tartar, 1/4 tsp
  • One-fourth cup of swerve sweetener (granulated)
  • A pinch of salt.

INSTRUCTIONS:

MAKING OF PIE CRUST:

  1. Pick a big vessel.
  2. Add salt, flour of almonds, & sweetener to it.
  3. Mix to combine well.
  4. Next, add butter (melted) & stir until the mixture looks like moist sand.
  5. Take a pie dish (glass/ceramic) & apply oil to it for easy separation.
  6. Transfer the prepared mixture of pie crust to the dish.
  7. Press it with your hands to make an even layer which should be of equal thickness.
  8. Make holes using any pointed object & to prevent over-browning, wrap the edges.
  9. Insert the pie dish in the oven that is already heated at 325 F.
  10. Bake for only 10 or 12 mins.
  11. As the timer gets off, take the pie dish out.
  12. Wait for it to come to the surrounding temperature.

FILLING:

  1. Meanwhile, make the filling.
  2. Place two empty & clean vessels on your working table.
  3. Start breaking eggs one by one.
  4. Collect all yolks in one vessel & whites in the other.
  5. Beat the yolks of eggs & use egg whites later for meringue.
  6. Pick another small vessel & mix water, xanthan gum & gelatin in it.
  7. Now, place a big saucepan on a normal flame.
  8. Pour lemon (juice &zest), salt, yolks (beaten), and sweetener.
  9. Include the mixture of gelatin in the saucepan once the boil comes.
  10. Continuously whisking for 2 or 3 minutes.
  11. At this point, include butter & mix till it melts.
  12. Now, your lemon filling is ready.
  13. It is time to pour the lemon filling into the baked & cooled pie crust.
  14. Use the fridge to set it for 5 or 6 hours.

MERINGUE:

  1. Now we have to work on the egg whites that we have separated earlier.
  2. Grab an electric mixer ( hand or stand).
  3. Start beating the whites of the egg.
  4. Include sweeteners one by one & vanilla essence while continuing the beating.
  5. Beat till stiff peaks form.

ASSEMBLY:

  1. Transfer your meringue over the top of the chilled lemon filling.
  2. Spread it in an even layer.
  3. Show your creativity & make design (either swirls or peaks) using the back of a spoon.
  4. Now you have two options; Either place the pie dish near the oven flame or use the torch (culinary) to brown the edges.
  5. It enhances the design & gives our lemon meringue pie the perfect finish.

STORAGE INFORMATION:

We don’t recommend freezing. The process (freezing/defrosting)will destroy the texture of the meringue. There is no solution to fix it.

Use the fridge to keep the pie safe & eat for about 2 or 3 days.
