INGREDIENTS:

MEXICAN COCKTAIL SAUCE:

  • Cubed half avocado, large
  • Chopped cilantro (fresh), 1/3 cup.
  • A teaspoon of black pepper.
  • 1/3rd cup of diced onion (red)
  • Salt, 1 tsp.
  • A medium-sized diced tomato (Roma)
  • Juice of lime, 1 tbsp.
  • Half Seeded & diced jalapeno, medium-sized
  • A couple of tbsp of hot sauce (Mexican)
  • Sugar-free ketchup, 6 tablespoons.

SHRIMP:

  • 2 tablespoons of juice of lime.
  • To taste, Salt
  • Medium-sized shrimp, 340 g.
  • Pepper powder, to taste.

INGREDIENT NOTES:

SHRIMP:
You may use any size of shrimp. We use medium-sized shrimp here. Get prepared shrimp but it is possible to do it by yourself. You have the choice of using raw, frozen, or cooked shrimp.

JUICE OF LIME:
The acid present in the juice helps to tender the shrimp.

SAUCE BASE:
Combine Tabasco hot sauce, juice of lime, and homemade & sugar-free ketchup. It forms the base of the Mexican cocktail sauce.

TOMATO:
You have the choice to use any type of tomatoes as we have to dice them. We use Roma tomatoes here.

ONION:
It adds crunchiness and crispiness to the dish. You may add cucumber or celery for the said purpose.

JALAPENO:
As the dish is already spicy we should leave the seeds of jalapeno. You may add them for an extra spicy kick.

CILANTRO:
Mexican flavors go well with the fresh cilantro. You may add up to one-third cup of it.

INSTRUCTIONS:

TO POACH THE SHRIMP:

  1. Pick a pan & fill water in it.
  2. Place that pan on the flame at normal heat.
  3. Turn the flame off once the water boils.
  4. Dip the shrimp in that water for 3 or 4 minutes.
  5. Keep a pot with ice-chilled water near you.
  6. Remove the shrimp from hot water.
  7. Transfer it to the chilled water.
  8. This will stop further cooking.

MAKING COCKTAIL SAUCE:

  1. Add, every item used to make the sauce, in a big vessel.
  2. Combine to make the smooth sauce.
  3. Include avocadoes & cooked shrimp and fold.
  4. You may also try to dip the shrimp in the cocktail sauce.
  5. Your Mexican shrimp cocktail is ready.

TIPS:

If you are planning to dip the shrimp in the sauce then leave its tail. Otherwise, remove them.
Shrimps are so easy to tender so never cook it with the flame on.
If you are marinating the shrimp then don’t go beyond 7 or 8 hours.

STORAGE DIRECTIONS:

If you store this dish, it may continue to be tender and mushy. The juice of lime will continue to cook it even if you keep it in the refrigerator. Always try to make it when you have to eat or serve.
Even then if you want to store the remaining dish you have, may store it for a day using the fridge.
