Keto Pea Soup

Keto Pea Soup is very healthy & ideal for us. Peas have a little more carbs but they give us a healthy package full of nutrients. They have vitamins, proteins, antioxidants, and fiber. We can save the peas in our freezers for having the soup at any time of the year. This Keto Pea Soup gives us amazing feasibility. We can prepare it & store it to have it any time without working/waiting. We only have to warm it up on the stovetop & enjoy/serve it only in ten minutes.

EQUIPMENT:

 

  • 1 blender
  • A saucepan
  • Serving bowl 1

INGREDIENTS:

 

  • 680 grams of fresh/frozen peas
  • To taste peppercorn powder
  • Minced garlic cloves, 2
  • Salt, one-fourth tsp/to taste
  • 2 tablespoons oil of olives
  • One-fourth cup of heavy cream
  • A medium-sized diced onion

INGREDIENT NOTES:

 

PEAS:
You may use fresh/frozen peas here. Frozen peas are sweet compared to fresh ones, giving an attractive green color to the soup.
Include your choice of veggies. Never use dry split peas here as they take longer to cook with the fresh veggies.

ONIONS:
You are most welcome to add the diced onions. It gives the traditional flavor.

OIL:
Use any oil like avocado/olives. Saute the veggies in oil to tender them.

HEAVY CREAM:
Depending on your choice, you can use cream (heavy, sour) or yogurt (greek).
If you want to have the dairy-free option then use coconut milk. Any of these will give your soup a silky & velvety texture.

STOCK:
It is better to use vegetable stock here. Chicken or bone broth will taste delicious if you are not vegetarian.

GARLIC:
Fresh garlic always works best. Use either garlic (fresh minced or jarred minced)or its powder.

INSTRUCTIONS:

 

  1. Place a large pot over the normal flame.
  2. Pour the oil of olives & heat it.
  3. Now add onion & saute them till soft.
  4. At this point, include garlic.
  5. Cook till it gives you its classical aroma.
  6. Now, add vegetable stock & peas to the pot.
  7. Wait for it to start boiling.
  8. Then let it cook for about 15 or 17 minutes on slow heat.
  9. Turn the flame off & wait for it to cool a little bit.
  10. Then transfer the soup to the blender & blend it well.
  11. As you get the smooth paste, then transfer it back to the pot.
  12. Include the cream & mix well.
  13. Cook till it starts to boil.
  14. Now turn the flame off.
  15. Your soup is ready!

TIPS:

 

Use cream (heavy), half & half, or milk (whole) to set the level of creaminess as per your choice.

We always recommend using fresh peas. Frozen peas help when fresh peas are out of season or you need to save your time.

STORAGE INSTRUCTIONS:

 

FREEZER:
Use the freezer to keep your soup safe for 90 or 100 days in the locked vessel.

FRIDGE:
Cool down the soup to the surrounding temperature then pack it in the locked container. Use the fridge to store it for three or four days.

EARLIER PREPARATIONS:
This soup is too workable to prepare earlier. You may prepare a larger amount & store it in the portions in separate containers. Freeze all the containers. When you plan to serve or crave the soup then take a container out & only reheat it at the stovetop.
