Keto Roasted Delicata Squash is a simple keto appetizer best for trips or vacations. This dish contains parmesan and sage. Easy to prepare and full of taste! Its flavor is enhanced when roasted with garlic and parmesan. It goes well with keto green bean casserole and mashed cauliflower. And the standing rib roast is very fantastic. The edible peel is one advantage of this attractively patterned squash. Its skin is more fragile than that of other winter squash, which is actually why it is named “delicata.” Roasting makes it extremely soft, so there’s no need to peel it. EQUIPMENT:

INGREDIENTS:

  • 2 small delicata squash
  • 2 tbsp. butter melted
  • 6 tbsp. Grated parmesan, divided
  • ¾ tsp. salt
  • ½ tsp. pepper
  • ½ tsp. garlic powder
  • ½ tsp. Ground sage
  • Chopped parsley for garnish

INGREDIENT NOTES:

DELICATA SQUASH:

  • Always buy the squash that has no marks, or soft spots; and is firm when you touch.

BUTTER:

  • Butter is used to toss the squash before it is roasted. Oil of olive works fine to toss the squash.

PARMESAN:

  • Freshly grated parmesan is used to make this Delicata squash; we can also use Pecorino, Romano, and Asiago cheese for this purpose.

SEASONING:

  • Roasted dedicata squash is seasoned with sage, garlic powder, salt, and pepper.

PARSLEY:

  • Parsley is used to garnish the roasted delicata squash, but it is optional.

INSTRUCTION:

PREPARATION:

  1. Take your sheet (baking) and put the paper (parchment) on it.
  2. Cut the Delicata squash in half length-wise and remove its seeds with the help of a spoon; you can also use your hands to remove the seeds.
  3. Put the cut side of the squash on the board and cut it into half-inch slices.

COAT THE SQUASH:

  1. Take a bowl and add transfer the squash in the bowl.
  2. Then add the melted butter to the bowl and shake the bowl to toss the squash with melted butter.
  3. Add the remaining ingredients like ¼ cup of parmesan cheese, salt, pepper, garlic powder, and sage.
  4. Cover the bowl with the lid and mix it again to coat the slices of delicata squash.

ROAST THE DELICATA SQUASH:

  1. Take the prepared sheet (baking) and put the slices of coated delicata squash in a layer.
  2. Bake it at four hundred degrees F for 15 minutes.
  3. When it is done put it out and spread the grated parmesan cheese and parsley on the roasted delicata squash.

ANOTHER METHOD TO ROAST THE DELICATA SQUASH:

  1. You may also prepare it in an air fryer! Although it’s difficult to squeeze all of them in at a time, I prefer them that way.
  2. Set your air fryer to 375 degrees F and roast for 15 minutes if you want to give it a try.
  3. The temperature and time to roast the delicata squash depend on the model.
  4. Flip the squash during cooking time.

TIPS:

  • Always buy the small delicata squash around 1.5 lb. They are very easy to handle and get tender in no time.
  • Properly wash your squash with clean water to remove any dirt on the squash.
  • Try to buy the organic delicata squash to prevent it from sprays and pesticides.
  • Cover the sheet (baking) with the paper (parchment) to avoid sticking up the delicata squash with the sheet.

STORAGE INFORMATION:

FRIDGE:

  • Put these roasted delicata squash in sealed containers and store them for five days.

FREEZER:

  • Put the roasted delicata squash on the sheet (baking) in a layer and freeze it.
  • Then put in the sealed bag and store it for 3-4 months.

REHEAT:

  • Put the pieces of delicata squash on the sheet (baking) in a single layer brush some olive oil over these squash and put it in the oven.
  • Reheat it for ten to fifteen minutes or till it gets warm.
