Keto Roasted Kohlrabi

Keto Roasted Kohlrabi is a low-carb delicious dish. It is very simple and convenient to make with a small list of items. Kohlrabi is full of nutrients such as antioxidants. The dish is not only ideal for the keto diet but it is also safe to eat for vegans (omit parmesan or replace it with non-dairy cheese). German turnip is another name for kohlrabi. It comes in green, purple, and white colors. Keto Roasted Kohlrabi only has 6 g of net carbs in a serving.

INGREDIENTS:

  • Peeled bulbs of Kohlrabi, 4
  • To taste powdered peppercorns
  • A tablespoon oil of olives
  • 1/3rd cup of parmesan cheese (grated)
  • Salt, to taste
  • Minced garlic clove, 1

INGREDIENT NOTES:

KOHLRABI:
The “German turnip” is another name for it. It comes in purple, green, and white colors & you may use any one of them in your recipe.

SEASONING:
Use the already-made or bought Italian seasoning to give the classic touch to your Kohlrabi (roasted). You might choose to substitute fresh herbs for dried ones.

OIL:
You may use oil of olives (light/extra-virgin) or avocadoes to fry/roast our Kohlrabi.

CHEESE:
If you are short on time then buy the already-shredded pack of parmesan cheese. Otherwise, buy fresh parmesan cheese & grate it by yourself. It will be best.

POWDERED GARLIC:
You may use garlic (fresh) but there is a strong chance that it might get burned. Therefore, we recommend the powder of garlic for its flavor in our recipes.

INSTRUCTIONS:

  1. Prepare a sheet of baking by spreading parchment on it.
  2. Switch the oven on and set it at 230 Celsius to heat up then start working.
PREPARE THE VEGGIE:
  1. Wash Kohlrabi in the proper way to remove any dirt.
  2. Wait for it to dry.
  3. Use a peeler to de-skin the Kohlrabi.
  4. Now, pick a knife and cut off the edges.
  5. Then slice the Kohlrabi into half & cut six slices(wedges) from each half.
  6. So, you get 12 wedges from a single bulb of Kohlrabi.
SEASONING:
  1. Place a little bowl on your working counter.
  2. Add powdered peppercorn, garlic, seasoning (Italian), salt, & oil of olives.
  3. Mix them well & then add wedges of Kohlrabi.
  4. Mix well to coat them with seasoned oil.
BAKING:
  1. Arrange the seasoned wedges of kohlrabi(layer) in an already lined sheet of baking.
  2. Insert the dish in the oven for 30 or 35 minutes.
  3. Turn their sides once half the time has passed.
  4. Check with the fork after the timer gets off.
  5. The wedges should be tender from the inside & crispy brown on the outside.
  6. So, that means our roasted Kohlrabi is ready!

TIPS:

  1. If you got leaves along with a bulb of Kohlrabi then wash, dry, chop, and saute them. They have the nutritional benefits of fiber and minerals. So, use it
  2. If the size of Kohlrabi is large then it has hard skin. You will find it challenging to peel the whole bulb. So you may follow some tips:
  3. Either blanch it or rotate it in the microwave.
  4. First, slice it into wedges & then peel. It will take a bit more time but will de-skin with ease.
  5. You may add 2 tablespoons of balsamic vinegar or juice (1 tbsp) + zest of lemon (a tsp).
  6. Be sure that you don’t overcrowd the sheet with seasoned kohlrabi. Arrange it in a layer with little space between them to get them roasted in a perfect manner.

STORAGE INFORMATION:

FREEZER:
Use a freezer to store the cooked kohlrabi for up to 90 or 100 days. You may freeze uncooked veggies. You have to chop and boil it for only 2 or 3 minutes. Then cool & dry the Kohlrabi before freezing.

FRIDGE:
Keep the remaining kohlrabi in a container that is air-tight. Use the fridge to keep it safe for 4 or 5 days.

EARLIER PREPARATION:
Wash, dry, cut the Kohlrabi & wrap it. Then place it in the fridge to use whenever you want. You have quick roasted Kohlrabi anytime.

FAQs:

What do we have to do if it is challenging to peel the whole kohlrabi?
If you find it difficult to de-skin the whole kohlrabi, then use any of the three methods described below:
After blanching it for some time in boiling water, peeling it will be simple.
Make holes & place them in the microwave for 60 seconds. Then peel.
The last option is to slice the kohlrabi first into wedges then it will be more convenient to peel (it takes more time).
