- 1 tbsp. apple cider vinegar
- 3 tbsp. blueberries
- 1 tbsp. Best powdered monk fruit
- ¼ tsp. sea salt
- 1/8 tsp. black pepper

OLIVE OIL:
- I suggest using a light olive oil, such as this one, because I believe it complements fruity dressings better than extra virgin. Avocado oil is also effective.
APPLE CIDER VINEGAR:
- I like apple cider vinegar in this mixed spring salad. In addition to adding tang, the vinegar aids in the dressing’s emulsification. If you need an alternative, lemon juice works well.
SWEETENER:
- Although the berries naturally sweeten the dressing, their presence doesn’t make it very sweet. You don’t need to use a sweetener, but I use a small amount of natural powdered Besti, which dissolves easily and doesn’t have any gritty texture. For a taste boost, you may also add my natural keto-friendly free from sugar honey or maple syrup. Plain powdered Allulose would also work, but I don’t advise using most other keto sweetener alternatives because they don’t dissolve effectively.

MIX THE DRESSING:
- In a blender incorporate all the ingredients of dressing and process until smooth. Simple!

- Take a bowl (large), combine the goat cheese, blueberries, walnuts, and spring mix; and mix with the spatula.
MIX:
- Sprinkle salad of spring mix with the salad dressing of blueberry vinaigrette and mix with them properly.

- Cover the lid of the bowl and toss properly to get an even coating on the salad.

- After adding the dressing, the spring mix salad does not keep well in storage. The leaves rapidly get soft!
- The salad and dressing, however, can be kept in the fridge in different airtight containers or in a produce container.
- I’ve prepared the dressing up to five days in advance without any problems, but the salad will only survive a few days.

- We should not freeze the salad; as it will not taste the same and texture & nutrition will also ruin after freezing the salad.
SERVING SUGGESTION:
- Adding a protein on top to turn this salad into a meal is one of the simplest ways to serve it! For the simplest alternatives, I prefer to add sliced baked or grilled chicken breast, but a baked salmon fillet is also delicious.
- The finest time of year to get out the grill and prepare my succulent grilled steak, Mediterranean-style chicken kabobs, or flaky grilled salmon is in the spring. Additionally, you can cook some lobster tails if you want to go fancy.
- I prepare the juiciest air fryer pork chops, 5-minute air fryer brats, or air-fried boneless chicken thighs if it’s raining and I still want something fast and “springy.”
