BASE COOKIE:
Half tsp of vanilla essence
2 cups flour of almond
A big yolk of egg
0.5 teaspoon of baking powder
One-third cup of swerve sweetener (powdered)
Seven tbsp of softened butter.
FILLING OF CARAMEL:
Keto caramel sauce, 8 tablespoons
CHOCOLATE-FLAVORED DRIZZLE:
Two oz. of chopped dark chocolate (sugar-free)
1/4th cup of whipping cream (heavy)
A tablespoon of allulose.

INSTRUCTIONS:
- Heat the empty oven to 325 F.
- Pick a sheet of baking paper and cover it using the parchment/silicone mat.
- Place a big vessel on your working counter.
- Include the butter in it & beat it until it looks like the cream.
- Now, include sweetener in it & beat till it mixes.
- Then, there comes the turn of vanilla & yolk of an egg.
- Mix them all very well.
- Mix all the dry items in another vessel.
- Shift the mix of dry items to the big vessel having the liquid mix.
- Use clean hands to combine them into the dough.
- Make fourteen same-sized portions of the dough.
- Use your hands to make round & smooth balls for each portion.
- Then put each ball on the baking sheet, keeping at least 6/7 inches of distance.
- Press each ball a little using your hand (palm) so it will be three-fourth inch thick.
- Use any round tool to make a shallow groove on the top of the cookie.
- Shift the baking sheet to the oven (heated).
- Wait till their edges start to brown.
- Remove them from the oven right away.
- If they look soft to you, still don’t bake them more.
- Place them out of the oven for 0.5 hours.
- They will firm up & become crispy while you prepare the caramel sauce.
- Follow the instructions to make the thick caramel sauce.
- Now, fill the wells of the cookies with the syrup.
- Meanwhile, prepare the chocolate sauce.
- Place a normal-sized saucepan on the stove over normal flame.
- Include and mix the cream & sweetener.
- Shift the saucepan back to the shelf while turning off the flame.
- Include the chopped chocolate in it & wait five minutes.
- Mix well to have the smooth chocolate sauce.
- Shift the baking tray from the fridge to the shelf & spread the chocolate sauce over them.
TIPS:
I have baked large cookies; thus, the serving is only one cookie per person. You may reduce the size of the cookies to half. You may enjoy the two cookies/serving in this manner.
We will need the thicker version of caramel sauce for our cookie filling. We recommend you make the sauce first & allow it to thicken while we do our other work
