INGREDIENTS:
VANILLA CAKE LAYER:
- 3 room-temperature eggs
- ½ cup liquefied butter
- ½ cup swerve brown
- ¼ cup Erythritol
- 1 teaspoon vanilla extract
- 1 & ½ cups almond flour
- One tsp. baking powder
- ½ teaspoon salt
FILLING LAYER(VANILLA & MINT):
- ¾ cup almond milk
- 3 tbsp. powdered Erythritol
- 2 blocks of soft cream cheese
- 1 tsp. mint essence
- 1 teaspoon of vanilla essence
VANILLA PUDDING LAYER:
- 2 boxes of Keto-friendly & prepared vanilla Pudding
WHIPPED CREAM LAYER
- 1 & ½ cup chilled heavy cream
- 3 tbsp. powdered Erythritol
- ½ tsp. vanilla extract

INSTRUCTION:
TO MAKE THE VANILLA CAKE LAYER:
- Heat the oven to 350 degrees F.
- Put the parchment paper in the baking dish and apply the oil with the brush.
- Take a medium bowl and add the almond flour, salt, & baking powder & mix them with using whisk.
- Grab the mixing bowl and add the melted butter, Erythritol, serve brown, vanilla extract, & eggs, and mix all of them with the whisk till they get fully incorporated.
- Add the dry ingredients in the wet components and fold them gently & incorporate them properly.
- Transfer the vanilla batter in the cake pan and bake the cake for twenty to twenty-five minutes.
- When the vanilla cake is baked place the cut in the side so that it gets cool down.
TO MAKE THE VANILLA & MINT LAYER:
- Take a mixing bowl and add the Erythritol, mint & vanilla extract, almond milk, & cream cheese and beat them with the beater till it gets smooth & creamy.
- When the vanilla cake layer gets chilled then spread the vanilla & mint layer evenly on it and put in the fridge for 20 minutes.
 PREPARE THE PUDDING LAYER(VANILLA):
- Take a bowl add the vanilla pudding in it and prepare the pudding as mentioned on the box.
- Then cool the vanilla pudding for some time and then put the vanilla pudding layer on the vanilla & mint layer.
TO MAKE THE WHIPPED CREAM LAYER:
- Take a chill mixing bowl and add heavy cream, vanilla extract & Erythritol in it.
- Beat them with the beater till they form the stiff peaks.
- Then spread the whipped cream layer over the vanilla pudding.
- Put it in the refrigerator to chill for two hours.
- Then slice them into squares and garnish them with chopped mint pieces & serve.
TIPS:
- If you don’t like the taste of the almond milk then we can also utilize soy or coconut milk to prepare this lasagna.
- Don’t forget to chill the bowl and use chill cream to perfectly whip the cream.
STORAGE INFORMATION:
FRIDGE:
- Put the vanilla protein lasagna in a box and keep it for 5 days in the fridge. If possible then store the mint layer and brownies separately and assemble when required.
FREEZER:
- We can tightly wrap the vanilla cake in the plastic wrap and keep them for 3 months.
- Put the whipped cream and vanilla & mint layers in separate containers and keep them for 1 to 2 months.
