ZUCCHINI:

  • You will have to grate the zucchini & remove excess water by pressing the shredded zucchini. Otherwise, your fritters will not be crispy if you leave the water in the zucchini.

EGGS:

  • These two eggs are essential in binding the veggie mixture. You can shape them nicely, and they will not break upon frying.

CAULIFLOWER:

  • It is mandatory to remove water from the fritters. For this, you need to shred the cauliflower florets or make its rice. Then, similarly, press them like zucchini to remove all the excess water to have the best crispy fritters.

INSTRUCTIONS:

  1. Properly wash & dry all the veggies, then start working.
  2. Shred the cauliflower & zucchini.
  3. Release most of their water by pressing the shredded veggies.
  4. Now, grab a big bowl for mixing all the items.
  5. Include eggs, both of the keto flours(almond & coconut), green onions, shredded veggies, spices, & eggs.
  6. Use a spoon or your hand with gloves on to combine the mixture well.
