We can easily meal prep this dish by preparing the mushrooms, or its stuffing mixture. This dish is very versatile we can easily alter the stuffing according to our needs we can alter the chicken with tofu, or exclude the cheese & pesto to make it dairy-free. INGREDIENTS:
- 4 large Portobello mushrooms
- 2 tablespoons olive oil
- Pepper powder & salt
- 12 ounces shredded chicken breasts
- ½ cup pesto
- ½ cup diced roasted red peppers
- 1 small red onion
- 2 cloves garlic
- 1 cup shredded mozzarella cheese
- ¼ cup chafed parmesan cheese
- 4 basil leaves, chiffonade
- Pinch of red pepper flakes

PORTABELLO MUSHROOMS:
- I use large size Portobello mushrooms so that it could be easier for us to add the filling; however you can easily use button mushrooms, baby Bella, or cerimini.
CHICKEN:
- I use without bone & skin chicken breast to prepare stuffing for these stuffed mushrooms but we can also utilize chicken thighs as well.
PESTO:
- I prepare my own pesto sauce to prepare this side dish but we can also utilize store bought also.
CHEESE:
- I use shredded cheddar & grated mozzarella to make this recipe but you can use any kind of your favorite cheese like goat cheese, white cheddar, Romano, & feta etc.

INSTRUCTION:
- Heat the oven at 400 degrees F.
- Place the baking sheet on the shelf & put the parchment paper on it.
- We can cut the stem of the mushroom and the top layer to get flat.
- Then remove the gills & apply the olive oil on the mushrooms with the brush and season the mushrooms with pepper powder & salt.
- Bake these mushrooms for twelve minutes.
- We can slice the mushrooms stem and cap into small pieces.
- Take a mixing bowl and add the mushrooms pieces, roasted red peppers, crushed garlic, onion, pesto mozzarella cheese, & chicken and mix all of them.
- Put this filing in the mushrooms equally and drizzle some mozzarella cheese over it.
- Bake the stuffed mushrooms for seven minutes at 400 degrees F.
- When it is bake, then broil the mushrooms for 2 – 3 minutes so that the cheese will get crispy and perfectly brown & bubbly.
- When it is done take it out & pour a little pesto sauce on the stuffed mushrooms and garnish them with the fresh basil leaves, parmesan cheese, & red pepper flakes.
TIPS:
- We should use the fresh & large Portobello mushrooms so that we can easily stuff the mixture in them.
- If we have some rotisserie chicken then we can use them or we can boil & shred the chicken at the time of making this.
- We can make our own keto-friendly pesto sauce or we can carefully buy the sauce by reading the label.
- If we want to make this healthier than we can stuff different kinds of vegetables in them.
STORAGE INFORMATION:
FRIDGE:
- We can put the leftover pesto chicken stuffed mushrooms in the air-tight box and keep them for 4 days.
FREEZER:
- When these stuffed mushrooms gets cool down then put them in the seal bag & store them for 3 – 4 months.
REHEAT:
- We can reheat these stuffed mushrooms in the oven or in the air fryer as well.
