INGREDIENTS:

  • 1 tablespoon Olive oil
  • 1 pound without bone & skin chicken thighs
  • 1 medium onion
  • 2 pieces minced garlic
  • 1 tablespoon fresh grated ginger
  • Two tablespoons Thai red curry paste
  • One can of coconut milk
  • Four cups chicken broth
  • One tablespoon tamari
  • A cup of slices of mushrooms
  • 1 red bell pepper slices
  • One tablespoon lime juice
  • Zucchini noodles
  • Freshly chopped cilantro leaves
  • 1-2 Thai bird’s eye chilies
  • Lime wedges

INSTRUCTION:

  1. First, we place the wok on moderate to high heat and add the olive oil to it.
  2. Include the chicken thigh in the wok and cook the thigh and cook it for 5 to 7 minutes or till it gets golden brown from each side.
  3. When the chicken thigh is done, put the fillet on the plate and slice the chicken when it gets cool.
  4. Include the ginger & garlic and slices of onion and cook the onions for two to three minutes or till they get tender and translucent.
  5. Transfer the red curry paste to the skillet and cook it for one minute more.
  6. Add the coconut aminos, chicken broth, & coconut milk and mix them with the whisk, and bring to a boil.
  7. Let it cook for 5 to 7 minutes on low flame.
  8. Then add the mushroom, bell pepper, or any other low-carb vegetable and cook for an additional 5 to 7 minutes till the vegetables get tender.
  9. Add the slices of chicken and zoodles to the wok and cook them for 2 to 3 minutes.
  10. Then add the lime & chili if you want to make them spicy.
  11. Garnish them with lime wedges and parsley and serve.

TIPS:

  • You can adjust the texture of the zoodles to your preference like if you want the firm zucchini noodles then we can lightly saute the zoodles before putting them in the soup, or if you want a soft texture then we cook them for some more time.
  • We can adjust the amount of bird’s eye chili according to our tolerance level if we want to make the Thai red curry soup spicy.
  • You can also use it without bone and skin chicken breast to make this noodle soup.
