Over medium heat, warm the oil in a medium skillet with a heavy bottom.
In a medium bowl, combine eggs, tapioca flour, salt, pepper, and 1 teaspoon spicy sauce.
Chicken should be coated after being placed in the batter.
Once the oil is hot, gently add the chicken to the skillet.
Fry until golden brown on both sides.
Take out of skillet and set on a platter covered in paper towels.
Make the buffalo sauce in the meantime by combining the remaining hot sauce and butter in a skillet. Up until everything is incorporated, whisk.
Chicken is then added, and it is coated.
Transfer the chicken to a baking sheet that has been prepared, then broil it for two to three minutes on each side, being careful not to burn it.
With veggie crudités and your preferred dipping sauce, serve right away.
