We can also make this gluten-free as well by substituting parmesan cheese with dairy-free parmesan cheese or cashew cheese. I use almond-flour bread crumbs instead of normal bread crumbs to make it keto-friendly. You can easily make these meatloaf cups in advance freeze them and make them when required. INGREDIENTS:
- 1 lb. ground beef
- 1 cup of grated zucchini
- ½ cup grated Parmesan cheese
- ¼ cup almond flour bread crumbs
- 1 egg
- ¼ cup sliced onion
- 2 pieces of garlic
- 1 tbsp. dried Italian seasoning
- ½ tsp. salt
- ¼ tsp. pepper
- ½ cup marinara sauce
- Freshly chopped parsley
INGREDIENTS NOTES:
GROUND BEEF:
- I use 90% lean ground beef to make these meatloaf cups; we can also make this with ground chicken, beef, or pork.
ZUCCHINI:
- I use grated, squeezed zucchini to make these meatloaf cups to make them moist and healthy.
PARMESAN CHEESE:
- I use parmesan cheese to make these meatloaf cups tastier; you can also use dairy-free parmesan or cashew cheese if you are dairy-sensitive.
ALMOND FLOUR BREAD CRUMBS:
- I use almond flour breadcrumbs to make this recipe completely keto-friendly; you can use any keto-friendly breadcrumbs or pork rinds if you don’t find these.
EGG:
- Eggs are used to bind all the ingredients so it is a very important component; we can also make this with flax eggs as well.
ONION:
- I use a small amount of onions to make it tasty & flavorful; if we want to make it light then we can use shallots or green onions.
GARLIC:
- I use freshly minced garlic to make this; you can also use garlic powder but it doesn’t have the same taste.
ITALIAN SEASONING:
- I use keto-friendly & store brought Italian seasoning but you can also make them at home by combining the mix of dried herbs like oregano, rosemary, thyme, & basil leaves.
PEPPER POWDER & SALT:
- We can add the salt & pepper according to the requirement because parmesan cheese contains salt so it becomes salty if you add it without checking.
KETO-FRIENDLY MARINARA SAUCE:
- We should always buy sugar-free & keto-friendly marinara sauce & don’t forget to check the label before buying so that it doesn’t contain any sugar.
PARSLEY:
- I use freshly chopped parsley to garnish the meatloaf cups.

INSTRUCTION:
- Heat the oven to 375 degrees F.
- Take the muffin tin put the parchment cups in it and spray the oil.
- Grab a zucchini and grate the zucchini with a food processor.
- Put the chafed zucchini in the cheesecloth.
- Squash the water from the zucchini properly with all your strenght.
- Take a large bowl and add the squeezed zucchini, ground beef, pepper powder, Italian seasoning, crushed garlic, salt, eggs, bread crumbs, chopped onions, & parmesan cheese.
- Mix all the ingredients just enough so that they get fully incorporated.
- Take a scoop of mixture fill the muffin tin to the top with the mixture.
- Press the mixture so that it can form the shape and hold together.
- Bake these meatloaf cups for 20 to 25 minutes or till the meat are cooked enough and get a slightly brown color.
- When the meatloaf cups get baked drizzle the marinara sauce on them and bake for 5 minutes more.
- Take them out put them on the shelf for 5 minutes and garnish them with freshly chopped parsley.

TIPS:
- If almond flour bread crumbs are not available you can also use pork rind crumbs to make it keto-friendly instead of normal bread crumbs.
- You can make them cheesy by garnishing the cups with cheese in the last with marinara sauce.

STORAGE INFORMATION:
FRIDGE:
- Put the leftover meatloaf cups in the sealed box and keep them for 3 days.
FREEZER:
- Put the meatballs on the sheet and then put them in the bag and keep them for two months.
REHEAT:
- Reheat these meatballs in the oven at 350 degrees F for 15 to 20 minutes or till they get warm.
