INGREDIENTS:

  • 4 Chicken Thighs
  • 2 teaspoons Cajun Spice
  • 4 slices Bacon
  • 2 medium Zucchini
  • 4 ounces Arugula
  • 1 Avocado 1 half
  • 1 ounce Green Olives
  • 2 tablespoons Keto-friendly Mayonnaise
  • Two tbsp. Olive Oil
  • One tbsp. Apple Cider Vinegar
  • Salt
  • Pepper

INSTRUCTIONS:

  1. Take a chicken and put the chicken in the bowl then season the chicken with Cajun seasoning.
  2. Put the chicken on the corner.
  3. Then set a non-stick frying pan on the heat over moderate flame then add the bacon in the pan.
  4. Saute the bacon till they get crispy. Divide the bacon into small pieces.
  5. Then add the chicken in the same frying pan and fry in them for five to seven minutes per side.
  6. Take a bowl and add avocado, olive oil, mayonnaise, black pepper powder, & salt in them and give them a good mix.
  7. Blend all of them with the immersion blender till the thick and smooth sauce is formed. Put the sauce in the corner.
  8. Make the spiral of zucchini and add them in the large mixing bowl, then add the arugula, salt, & olive oil in the bowl.
  9. Mix all of them properly and divide them into four bowls.
  10. Then add the chicken, green olives, bacon, & avocado slices to them.
  11. Transfer the dressing with the spoon on the chicken zoodles salad and serve the salad.

TIPS:

  • If you want your bacon to get extra crispy; you cake give some more time but be careful so that they will not get burn. We can also do this in the oven at 400 degrees F for around fifteen to twenty minutes in this way they get extra crispy and we do not have to monitor them.
  • Infuse the chicken for at least fifteen to thirty minutes to get the maximum flavor; we can also marinate the chicken for around one to two hours as well. We can also use other spices to make a variation in taste of chicken.
  • Utilize fresh and firm zucchini to make their spirals so they do not get mushy. We can dry the zoodles by using paper towel to eliminate the water content of them.
  • If the avocado dressing is thick then add the lemon juice to thin it will enhance the taste of the dressing.
  • To get the juicy and tasty chicken cook the chicken on medium high heat but cook it in patience because inside of the chicken should be tender and outer skin should be crispy. We can also check it with the meat thermometer.
  • If we want to make the salad more flavors then saute the arugula with garlic & olive oil.

STORAGE INFORMATION:

It is not suggested to stock-up this chicken zoodles salad, as it will lose its consistency & taste. But we can prepare all the components and store them and combine all of them when required.

Chicken:

  • When the chicken gets done, put the chicken in the single layer and store them after it get cools down for three to four days.

Zoodles:

Arugula:

  • Take a close box and place the paper towel in them then transfer the arugula in this ways it can absorb all the moisture from them. Store the arugula for three to four days.

Bacon:

  • Fry the bacon and transfer them in the paper towel containing box so that it can remove the excess grease then store them for four to five days.

Avocado dressing:

  • Transfer the dressing to the sealed bowl and tightly cover it with the plastic wrap to prevent it from getting brown.

Green olives & other toppings:

  • Put these toppings in the sealed box and store them four to five days.

FREEZER:

  • It is not advice to freeze the salad not their components as well as they will get mushy if you freeze them; though you can prepare the chicken & bacon in advance and freeze if you want.
