INGREDIENT NOTES:
ZUCCHINI:
- You may use yellow squash or any size would work. Use any leftover zucchini to create my sautéed zucchini, filled zucchini boats, zucchini roll-ups, or zucchini pizza bites.
OLIVE OIL:
- For optimal flavor, I use extra virgin olive oil, but you may use avocado oil or any other neutral cooking oil of your choice.

INSTRUCTION:
- Slice the zucchini thinly; each slice should be 1/8 inch thick.
- After that, blot away any extra moisture with a paper towel.
- To uniformly coat the zucchini slices, season them with sea salt, black pepper, and olive oil.
- Arrange the slices of zucchini in a one row within the basket.
- Cook the zucchini chips, turning halfway through, until golden brown.
- To make them crisp, let them cool.
TIPS:
- Using a mandolin to slice the zucchini chips speeds up the procedure and, more significantly, results in thin, uniform slices. Using a knife to cut thin enough slices is more challenging.
- Excessive oil might keep food from crisping up. Additionally, zucchini chips from an air fryer will be far too salty if you season them regularly since they shrink a lot. Here, little is more!
- Chips that are overcrowded will get mushy. To achieve a single layer, cook in batches if needed.
- The time may be altered by even a small variation in thickness! I suggest cutting the zucchini into 1/8-inch-thick slices. They might not crisp up and takes a long time if the slices of chips are thick.
- Certain chips may cook more quickly than others, even when using a mandolin. Around the eight-minute mark, I normally check on my air fryer zucchini chips and take out any that are beginning to brown.
- When the chips are golden, you can stop frying them, but they must cool completely to crisp up.
SEASONING VARIATION:
Simply flavoring these air fryer zucchini chips with salt and pepper will make them delicious, but you may experiment with the flavors listed below.
ITALIAN:
- Add a quarter tsp. of powder of garlic and one tsp. of Italian spice to the zucchini chips.
HOT AND SPICY:
- Utilize a tsp. of Cajun seasoning, jerk seasoning, or just a very thin sprinkle of cayenne when I want some heat.
RANCH:
- Before or after air-frying, you can add a tsp. of blend of ranch seasoning to the chips.
PARMESAN CHEESE:
- These are elevated with a sprinkling of grated Parmesan cheese! You’ll require around a quarter cup.
STORAGE INFORMATION:
AMBIENT TEMPERATURE:
- Air fryer zucchini chips may be stored in the pantry for one to two weeks in a sealed container as long as they are cooked until they are suitably crispy (that is, there isn’t much moisture remaining).
AIR FRY AGAIN:
- They do go mushy when stored, so I generally put the zucchini chips back in the air fryer for a minute or so to crisp them up again (at the lowest setting to avoid burning).
PREPARE IN ADVANCE:
- These can be prepared ahead of time since they will crisp up like the ones above, but if you like the texture of freshly created ones (the best!), simply slice the zucchini beforehand and fry the zucchini chips on the day of the event.
SERVING SUGGESTION:
- I like air-fried zucchini chips best when they’re eaten by you since they make a fantastic snack. Try a dipping sauce, though, if you want a bit more.
- Have these zucchini chips with ranch dressing or tahini sauce.
- Crispy zucchini chips from the air fryer are excellent dippers for guacamole, salsa verde, and even the traditional fresh tomato salsa.
- Crab dip is a great hot dip for them, but spinach dip or sausage rotel dip would also taste great.
- Serve these zucchini chips with your chilled crab dip or pate instead of crackers.
