INGREDIENT NOTES
Fathead pizza dough: The low carb pizza crust is made of a pretty traditional fathead dough – spices, cream cheese, mozzarella cheese, egg, and almond flour.
Pizza sauce: I prefer to make my own while there are many delicious store-bought pizza sauces. That way I can skip the additives and control the ingredients.
Ground beef: Without the burger part, you can’t really have a bacon cheeseburger pizza!

For fathead dough, can you use fresh mozzarella?
Fathead dough can be frozen, but it is best when fresh. I recommend forming it into a pizza crust for best results before freezing.
Can you make this ahead of time?
Yes! the night before, you can make the crust and leave it in the fridge until you are ready to use it.
INGREDIENTS
FOR THE CRUST
- 1 ½ cup mozzarella cheese, shredded
- 3 tablespoons cream cheese
- 1 large egg
- ¾ cup blanched almond flour
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ONE teaspoon Italian seasoning
- 1 teaspoon sea salt
- ½ teaspoon black pepper
FOR THE TOPPINGS
- ½ cup low carb pizza sauce
- 2 teaspoons yellow mustard
- ½ pound ground beef
- 2 cloves garlic, minced
- ½ cup diced onion (about 2.5 oz)
- 4 slices bacon, cooked crisp and crumbled
- 15 dill pickles slices
- 1 ½ cups shredded cheese
INSTRUCTIONS
FOR THE CRUST
- Preheat oven to 425°F.
- Combine mozzarella and cream cheese in a microwave(large) safe mixing bowl. Microwave for ONE minute. Take it out from microwave and stir to combine. For ONE additional minute, return to microwave.
- Add egg, black pepper, garlic powder, onion powder, Italian seasoning, sea salt and almond flour to the mixing bowl. Mix until all ingredients are well incorporated.
- With parchment paper, line a TWELVE inch pizza pan. Into a thin but even layer, spread the “dough”, covering the pizza pan. Simply put it back in the microwave for ONE minute to soften if the dough gets too stringy and unworkable.
- For 10-12 minutes, bake on the middle rack or until it gets golden brown.
- To pop any bubbles, use a toothpick.
FOR THE TOPPINGS
- With the yellow mustard, mix the low carb pizza sauce and put it aside.
- Combine the pepper, onion, garlic, salt, and ground beef in a skillet, over medium heat. Sauté until the onions are soft and the ground beef is cooked through.
- Drain any excess grease.
PUTTING IT ALL TOGETHER
- Over the pizza crust, spread the pizza sauce evenly.
- Top with half of these cheese.
- Pile on ground beef mixture.
- Top with remaining pickle slices, crumbled bacon and cheese
- Reduce the heat to 350°F and for an additional TEN minutes, bake or until the cheese is bubbly and melted.
