INGREDIENTS:
- One tbsp. coconut oil
- One bay leaf
- One tsp. cumin (jeera) seeds
- One large onion (finely chopped)
- One tbsp. of ginger and garlic paste
- Four hundred grams of crushed tomatoes
- Three-fifty ml full-fat coconut milk
- One large head cauliflower cut into medium size florets (1000g)
- Salt (to taste)
- Lemon juice
- Coriander leaves (cilantro) two tbsp.
DRY SPICES:
- Half tsp. Turmeric powder
- One tsp. of red chili powder
- 1 tsp. coriander powder
- One tsp. garam masala powder
INGREDIENT NOTES:
Coconut oil:
- I use coconut oil in this recipe; we can use olive oil as well.
Coconut milk:
- Milk (coconut)is use in cauliflower curry. Almond milk may be a good alternative.
Cilantro:
- I add the cilantro to the curry we can add leaves (fresh mint) also. It enhances the aroma of the curry.

INSTRUCTIONS:
- Put the pot on the medium flame and add the one tbsp. Coconut oil in the pot and wait to get it hot.
- Then add one bay leaf and one tsp. Cumin seeds and let the cumin seeds crackle until they get golden brown and a nice aroma is coming. Don’t burn the cumin seeds,
- Then add the one finely chopped onion and one tbsp. Of ginger and garlic paste saute the onions until they get a nicely brown color for about a few minutes (three-four).
- Then add the four hundred grams of tomatoes in the pot and three-fifty ml of full-fat coconut milk.
- At this stage include the dry spices half tsp. powder (turmeric), one teaspoon Red chili powder, one teaspoon, Coriander powder, and one tsp. garam masala powder and cauliflower florets in the pot mix all the ingredients with the ladle.
- Add half a cup of water if required cover the pot with the lid and cook it for a few minutes (two to three).
- Once it’s done, check its consistency. If it’s too thick add water and if it is thin then cook it for a few minutes more until your preferred consistency.
- Dish out the cauliflower curry and have it with naan and rice.
TIPS:
- Keep an eye on the curry in the initial stage so the cumin seed or onion will not burn as it gives a very bad flavor to the curry.
- Saute the onion to a nice brown color it makes the curry color nice.
- Adjust the curry consistency according to your preference in the end.
