Keto Cheese Cream Blintz

A stuffed pancake known as a Keto Cheese Cream Blintz is typically filled with cream cheese and topped with a fruit compote. They are eggy, soft and slightly al dente, similar to the French crêpe, and comparatively thin compared to IHOP pancakes made in the United States.

Ingredients

Filler components:

  • Full-fat, organic ricotta cheese, 8 ounces
  • 8 ounces of organic cream cheese and cottage cheese, both at room temperature.
  • 1 large, organic, preferably Omega-3-rich egg per person.
  • A substitute sweetener, in the amount of 1-2 tablespoons
  • 1 tablespoon finely powdered flaxseed, 1/2 teaspoon ground Ceylon cinnamon, and 1/2 teaspoon pink Himalayan salt
  • optional 1 teaspoon vanilla extract
  • 1 teaspoon of each lemon zest, optional

Ingredients for the blintz wrapper:

  • Egg Thins With Cauliflower, such as Crepini and Egg Thins Cauliflower, come in a single package.

Serving recommendations:

  • 1 pint of sliced strawberries, raspberries, blueberries, or blackberries, or other seasonal fruit

  • 1 bottle of maple-flavored syrup, such as Lakanto Maple Flavor Sugar-Free Syrup, and 1 cup of sour cream

Instructions

Filling:

  1. Combine the salt, cottage cheese, cream cheese, egg, preferred sweetener, flaxseed(freshly ground0, cinnamon, ricotta cheese, and, lemon/vanilla essence.
  2. You can use this Blintz Filling right away or overnight in the fridge.
  3. Note: The Blintz Filling can be combined with a fine sieve set over a bowl, covered loosely with plastic wrap, and chilled overnight to produce a thicker filling. This will enable any extra moisture to collect behind the sieve, giving the finished blintz a stronger texture and more cheesy filling.

  1. One big soup spoon’s worth or three teaspoons worth of filling should be generously spooned into the bottom centre of a single egg-cauliflower crepe, leaving about an inch from the edge of the edge.
  2. Fold the crepe over the filling entirely by pinching the bottom edge.
  3. Using the right edge, fold the filling over and cover it by a third. Repeat on the left side to finish off with an envelope. The bottom edge should be level, and the right and left edges shouldn’t touch.
  4. To create a pillow that resembles a burrito, roll the crepe away from you. Keep the seam down and place it on a plate.
  5. Use the leftover crepes and Blintz Filling to repeat the process.
  6. Wrap each piece in plastic wrap before placing it on a level, flat surface in the freezer.

Keto Cheese Blintz Recipe Instructions:

  1. On the stovetop, preheat the pan for a few minutes over medium heat in a skillet, large sauté pan, or cast iron pan. Melt a couple teaspoons of coconut oil.
  2. Put 3–4 of the stuffed blintzes, fold side down, into the pan. This will help seal the blintz and cook the edge, making it simpler to turn and cook on the next size. Sauté for approximately 2 minutes.
  3. Once the second side has browned, take them out of the pan and either put them on a serving tray or into an oven that has been preheated to 250°F | 121°C.
  4. Inside the Oven If available, set your oven’s convection bake function to 350°F | 177°C.
  5. To prevent sticking, take a baking dish and coat it with melted or room-temperature butter. To fill the baking dish, place the blintzes next to one another. Drizzle melted butter or coconut oil over the blintzes’ tops.
  6. Bake for TWENTY FIVE to THIRTY minutes.
