Almond flour:
- You can use super fine texture almond flour to achieve great results. You cannot use coconut flour because it cannot give the right results.
Best monk fruit Allulose blend:
- I use Besti monk fruit because it can easily dissolve with the cream cheese. Another brand of sweetener leaves the grainy texture and this will not work for the cream cheese muffins.
Butter:
- I use butter in these muffins. We may use almond butter or cinnamon butter in these cinnamon and cream cheese muffins.

INSTRUCTION:
Make the cream cheese filling:
- Take a bowl of medium size.
- Add four oz. of cream cheese, Besti monk fruit powder, half a teaspoon of extract of vanilla.
- Beat it with a hand mixer until it gains the smooth texture and consistency.
- Put the plastic wrap on the shelf add the cream cheese mixture on the wrap fold it and twist its end to make it like a toffee.
- Freeze the cream cheese mixture for at least thirty minutes.
Muffin batter:
- Take a large bowl, add five tablespoons of butter (softened) and half a cup of Besti monk fruit sweetener.
- Beat both ingredients till the butter is light and fluffy.
- When the butter is light and fluffy add the three large eggs, three tablespoons of heavy cream, and one teaspoon of extract of vanilla.
- Add almond flour (two and a half cups), baking powder (two teaspoons), and a quarter teaspoon of sea salt.
- Beat the ingredients till they form a thick batter.
Streusel:
- Take a medium bowl add one cup of flour almonds, half a cup of Besti brown monk fruit sweetener, one tablespoon of cinnamon, and one-eight teaspoons of sea salt.
- In another small bowl add the two and a half teaspoons of butter (unsalted and melted).
- Add the butter mix in the dry ingredients give it a good mix and form the crumbles.
Assembly:
- Set the oven to preheat at three-twenty-five degrees Fahrenheit.
- Put the muffin wrapper in the 12 cavities of the muffin tray and brush the oil on the muffin wrappers.
- Add one cup of streusel over the muffin batter and fold it gently to form the streaks of streusel. (Don’t properly mix it).
- Pour the muffin batter into the cavities of the muffin tray and leave one-fourth empty from the above.
- Take out the cream cheese from the freezer cut it into twelve slices and add each slice in the muffin batter.
- Add the left-out streusel over the muffins like two tablespoons per muffin.
- Put the muffin tray to bake for twenty-two to twenty-eight minutes till the streusel gets a nice brown color.
- You can also provide the shield on the top with aluminum foil if it initiates to brown too much until done.
