INGREDIENTS:
CRISPY VEGGIES:
1/2 red cabbage, small.
Two green onions

1 carrot, small.
DRESSING:
Horseradish cream, 2 tsp.
1/2 cup of keto mayonnaise.
A tbsp of Dijon mustard.
Keto maple syrup, one tbsp.
A tablespoon of lemon juice.
INGREDIENT DIRECTIVES:
HORSERADISH CREAM: It is too spicy so add according to your tolerance level.
MAYONNAISE: Use your homemade keto mayonnaise. If you want to lower the creamy richness then mix mayonnaise with Greek yogurt in a ratio of 1:1. You are free to use mayonnaise instead of Greek yoghurt if you wish to have the lightest version.
MUSTARD: Use Dijon mustard so that it gives a little spicy & tangy flavour.
LEMON JUICE: Provide an enhanced taste to your homemade coleslaw.
MAPLE SYRUP: This recipe uses keto maple syrup to add a little sweetness. You are free to use any low-calorie sweetener as well.
CARROT: Carrots contain carbs. Adding them in small amounts won’t increase your carb count.
CABBAGE: Green cabbage is the key component. The recipe also uses the purple one to add a bright colour to our homemade coleslaw.
GREEN ONION: It adds a dark shade of green colour with a light pepper flavour.

INSTRUCTIONS:
PREPARE THE VEGGIES:
Properly wash all the veggies with tap water.
Take a sharp knife and a chopping board and start chopping the vegetables once they are dry.
Chop the cabbages, green onion, and carrots very small and thin.
Add all the veggies to a large vessel after chopping.
Toss them to combine well meanwhile start working for the dressing.
DRESSING:
Grab a normal-sized bowl.
Add horseradish cream, maple syrup, mayonnaise, lemon juice, and mustard.
Mix well to combine the dressing.
Then transfer the dressing to the bowl of mixed, chopped veggies.
Combine well then taste it.
If you don’t have to serve it immediately then leave it in the fridge to cool for at least 60 minutes or a most of 300 minutes. This process helps the flavours to develop.
Add salt, sweetener, or black pepper powder to set the taste according to your preference. and mix well.
TIPS:
If you slice the cabbage with a knife then it will take a lot of time. Use a shredding machine to speed up the process and shred thin cabbage.
You can also swap the written veggies with your preferred ones. Thin slices of onions, julienne-cut bell peppers, etc.
If you want your coleslaw not to be watery then don’t add salt earlier. As it drains moisture out from the veggies. Add salt and pepper powder right before serving to keep the good texture of the coleslaw.
You are free to use vinegar or dill pickle juice if you are not interested in lemon juice.
