Keto Egg Noodle Recipe:

Ingredients:

  • 4 large eggs
  • 4 ounces cream cheese, softened
  • 1/4 cup coconut flour
  • 1/2 teaspoon xanthan gum
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder (optional)

Instructions:

  1. In a mixing bowl, crack the eggs and beat them until well combined.
  2. Add the softened cream cheese to the bowl and continue mixing until the mixture is smooth and creamy.
  3. In a separate bowl, whisk together the coconut flour, xanthan gum, salt, and garlic powder (if using).
  4. Gradually add the dry ingredient mixture to the egg and cream cheese mixture, stirring well to combine. The batter will thicken as you mix.
  5. Allow the batter to rest for a few minutes to allow the coconut flour to absorb the moisture.
  6. Meanwhile, bring a large pot of salted water to a boil.
  7. Once the water is boiling, reduce the heat to medium-low, or a gentle simmer.
  8. Using a spoon or a piping bag, drop the batter into the simmering water, forming noodles of your desired length. Be careful not to overcrowd the pot.
  9. Cook the noodles for about 3-5 minutes, or until they are firm but still tender.
  10. Using a slotted spoon, transfer the noodles to a colander to drain excess water.
  11. Rinse the noodles with cold water to remove any remaining starch and prevent sticking.
  12. The noodles are now ready to be used in your favorite keto pasta dishes! You can toss them with sauce, vegetables, or protein of your choice.
