Recipe: No-bake Keto Cheesecake

Ingredients: For the crust:

  • 1 1/2 cups almond flour
  • 1/4 cup melted coconut oil
  • 2 tablespoons powdered erythritol (or your preferred keto-friendly sweetener)
  • 1/2 teaspoon vanilla extract

For the filling:

  • 16 ounces cream cheese, softened
  • 1 cup heavy cream
  • 1/2 cup powdered erythritol (or your preferred keto-friendly sweetener)
  • 1 teaspoon vanilla extract
  • Juice of 1/2 lemon

For the topping (optional):

  • Fresh berries or sugar-free fruit preserves

  1. In a mixing bowl, combine the almond flour, melted coconut oil, powdered erythritol, and vanilla extract. Mix until the ingredients are well combined and resemble a crumbly texture.
  2. Press the crust mixture into the bottom of a 9-inch springform pan, ensuring an even layer. Place the pan in the refrigerator to chill while preparing the filling.
  3. In a separate mixing bowl, beat the cream cheese until smooth and creamy. Add the heavy cream, powdered erythritol, vanilla extract, and lemon juice. Continue beating until all the ingredients are well combined and the mixture is smooth and fluffy.
  4. Remove the springform pan from the refrigerator and pour the filling over the crust. Use a spatula to spread the filling evenly and smooth the top.
  5. Return the pan to the refrigerator and let the cheesecake set for at least 4 hours or overnight.
  6. Once the cheesecake has set, carefully remove the sides of the springform pan.
  7. If desired, top the cheesecake with fresh berries or sugar-free fruit preserves before serving.
