For the filling:

  • 16 ounces cream cheese, softened

  • Juice of 1/2 lemon

Instructions:

  1. In a mixing bowl, combine the almond flour, melted coconut oil, powdered erythritol, and vanilla extract. Mix until the ingredients are well combined and resemble a crumbly texture.
  2. Press the crust mixture into the bottom of a 9-inch springform pan, ensuring an even layer. Place the pan in the refrigerator to chill while preparing the filling.
