Keto Chicken Cordon Bleu Recipe:

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 4 slices of ham
  • 4 slices of Swiss cheese
  • 1/4 cup almond flour
  • 2 tablespoons grated Parmesan cheese
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried parsley
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions:

  1. Preheat the oven: Preheat your oven to 375°F (190°C).
  2. Prepare the chicken breasts: Lay each chicken breast flat on a cutting board and use a sharp knife to make a lengthwise slit in the side of each breast, creating a pocket for the filling.
  3. Fill the chicken breasts: Place one slice of ham and one slice of Swiss cheese inside each chicken breast pocket.
  4. Season the chicken: In a shallow bowl, combine the almond flour, grated Parmesan cheese, paprika, garlic powder, dried parsley, salt, and pepper. Mix well. Brush the chicken breasts with olive oil, then coat them with the seasoned almond flour mixture, making sure to cover all sides.
  5. Bake the chicken: Place the coated chicken breasts on a baking sheet lined with parchment paper. Bake in the preheated oven for approximately 25-30 minutes or until the chicken is cooked through and the cheese is melted and bubbly.
