Recipe: Keto Sandwich Bread

Ingredients:

  • 2 cups almond flour
  • 1/4 cup ground flaxseed meal
  • 1/4 cup psyllium husk powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 4 large eggs
  • 1/4 cup melted unsalted butter or coconut oil
  • 1/4 cup unsweetened almond milk (or any low-carb milk)
  • 1 teaspoon apple cider vinegar

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a standard 9×5-inch (23×13 cm) loaf pan and line it with parchment paper for easy removal.
  2. In a large mixing bowl, whisk together the almond flour, ground flaxseed meal, psyllium husk powder, baking powder, and salt. Mix well to ensure even distribution of dry ingredients.
  3. In a separate bowl, whisk together the eggs, melted unsalted butter or coconut oil, unsweetened almond milk, and apple cider vinegar until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until you have a smooth and thick batter. The psyllium husk will absorb the liquid and create a dough-like texture.
  5. Quickly transfer the batter into the prepared loaf pan, smoothing the top with a spatula.
  6. Bake in the preheated oven for 45-50 minutes or until the bread is firm to the touch and has a golden-brown crust. A toothpick inserted into the center should come out clean.
  7. Remove the bread from the oven and allow it to cool in the pan for about 10 minutes. Then, use the parchment paper overhang to lift the bread out of the pan and transfer it to a wire rack to cool completely.

  1. I made this and it so did NOT turn out like this photo – it was not light and fluffy AT ALL, in fact it did not rise. However it did have a nice nutty taste – definitely not sandwich bread
