Instead of using dry pasta, which takes around seven to ten minutes to cook, cook the fresh pasta right after you’ve cooked the pancetta and peas.

Ingredients:

  • Spinach leaves 2 cups.
  • Black pepper.
  • Frozen peas: 1 cup.
  • Chili flakes: 2 tsp.
  • Pancetta: 2 oz.
  • Salt.
  • White miso pasta: 1 tbsp.
  • Eggs: 2.
  • Dried pasta: 8 oz.
  • Lemon juice: 1 tbsp.
  • Basil: 1 cup.
  • Mint leaves: 2 tsp.
  • Parmesan cheese: 2 oz.

Instructions:

  1. In a blender or food processor, mix the Parmesan cheese with the eggs, and then add the miso paste with the spinach.
  2. Then put the basil and lime zest and combine them perfectly.
  3. Pulse until very smooth, then remove and set aside.
  4. Prepare the spaghetti.
  5. Once a large pot of saltwater gets to a rolling boil, cook the noodles.
  6. As directed on the package.
  7. Transfer the chopped ham to the pan with the rising corners and put it on the normal flame.
  8. Cook while the pancetta is beautifully crispy, stirring occasionally.
  9. Finally, add the frozen peas and toss them into the pancetta to help them thaw.
  10. Switch off the heat.
  11. Drizzle about 1/4 cup of the pasta cooking water into your spinach sauce, mixing as you do.
  12. They will assist in tempering the sauce and prevent the egg yolks from scrambling when they come into contact with the hot pan.
  13. After the pasta is ready, return the skillet with the pancetta and peas to the heat and stir till you can hear it sizzling.
  14. Now turn off the heat and add the cooked pasta (we find it easiest to transfer the pasta from the cooking pot directly into the pan using a slotted spoon).
  15. Mix the spaghetti with the peas and pancetta.
  16. Add the spinach sauce, and when combining it with the spaghetti, thoroughly blend.
  17. The sauce will thicken as you stir it, cooking the eggs in the pan’s residual heat.
  18. After dividing the pasta among the dishes, sprinkle more Parmesan cheese, the leftover basil, mint leaves, and chili flakes on top.

Notes:

  • If pancetta is not available, add crispy bacon in place of it. Baby leaf spinach will blitz into the sauce faster, so try to use that.
