INGREDIENTS:

FOR LAYER OF WHITE CHOCOLATE:

  • A teaspoon of vanilla essence
  • 0.5 cup of cocoa butter
  • A pinch of salt
  • Two tbsps. of coconut oil
  • Essence of vanilla, 1 tsp.
  • One-third cup of erythritol/any keto sweetener(preferred)

FILLING OF PEANUT BUTTER:

  • A pinch of salt
  • 0.5 cup of peanut butter, natural
  • A tablespoon of coconut flour
  • Powdered erythritol, 2 tbsp.

INGREDIENT NOTES:

COCONUT FLOUR:

  • It is not necessary, so you can skip. If you feel that you have runny peanut butter, then, use the above mentioned quantity of coconut flour.

COCOA BUTTER:

  • This cocoa butter could not be substituted with traditional butter & cocoa powder. It will act as the base to make the white chocolate.

SWEETENER:

  • Use any of your preferred sweeteners like erythritol, monk fruit, or allulose, but use the powdered version for non-gritty texture.

PEANUT BUTTER:

  • Use the natural peanut butter that must be free from hidden sugar/high-carb preservatives.

INSTRUCTIONS:

PREPARATION OF WHITE CHOCOLATE LAYER:

  1. Use a double-boiler/microwave to melt the cocoa butter & coconut oil.
  2. Mix using a spoon every thirty seconds till they melt properly.
  3. After that, include essence of vanilla, sweetener(powdered), & salt(a pinch).
  4. Mix them to combine well.
  5. Include this white layer of chocolate in each liner of the muffin to cover the bottom.
  6. Keep the molds in the freezer to set (for around ten minutes)

FILLING OF PEANUT BUTTER:

  1. Include powdered erythritol, peanut butter, salt, & coconut flour.
  2. Mix all of them properly to make the filling(smooth & thick).
  3. Separate the portions measuring a spoonful & roll into balls.
  4. Place each ball in the muffin mold over the frozen chocolate base & press it gently.
  5. Now, cover it with the remaining mixture of white chocolate.
  6. Tap the molds gently to smooth & level the surface.
  7. To chill, put the molds again into the freezer.
  8. Wait until they become firm(around fifty mins).
  9. Your White Chocolate Peanut Butter Cups are ready to serve!

TIPS:

  • If the peanut butter filling is looking dry, then we can add the full spoonful of coconut oil in the filling to make it smooth.

STORAGE INFORMATION:

FRIDGE:
