Keto Pumpkin Spice Cake is a delicious mash-up of moist, yummy cake & cheesecake. It also has chopped nuts & keto chocolate chips. We make swirls using a knife, which gives the cake a seismic look once it comes out of the oven. It is the perfect dish for the ones who are on their keto diet. INGREDIENTS:

  • Pumpkin pie spice, 2 tsp
  • 2.3 cups of flour (almond)
  • Keto Choco chips, 0.5 cup
  • Two-thirds cups of keto sweetener (granulated)
  • 1/2 cup of pecans.
  • Whey protein powder (unflavored), 1/4 cup
  • Three-quarter cup of keto sweetener (powdered)
  • Baking powder, 2 teaspoons
  • Large eggs, 3
  • Eight oz. of softened cream cheese
  • 0.25 teaspoon of salt
  • Melted butter (unsalted & divided), 3/4 cup
  • Two-third cup, puree of pumpkin
  • 0.5 teaspoon of essence (vanilla)

INSTRUCTIONS:

  1. Switch the oven on & heat it at 325 degrees F.
  2. Pick a baking pan (ceramic/glass) & apply oil to its bottom and all sides.
  3. Place a big vessel on your working bench & gather all the items.
  4. Now, start the recipe by adding the solid items.
  5. Mix all the items very well.
  6. Now include eggs, essence of vanilla, pumpkin puree, & melted butter.
  7. Mix again till you have a smooth batter (don’t overmix).
  8. If you find the batter excessively thick, then gradually include a tablespoon of water.
  9. Mix & see if the more tbsp of water it needs.
  10. Don’t overthin the batter.
  11. Transfer & spread the batter into the baking pan (oiled) after adjusting the consistency.
  12. Place the second container in the working place.
  13. Include the cream cheese & the remaining butter (melted) into that vessel.
  14. Beat them using the mixer (hand/stand).
  15. Transfer the whipped cream cheese mixture to the baking pan over the cake batter.
  16. Add pecans & make the designs using a knife/wooden stick.
  17. At the end, spread the Choco chips (keto).
  18. Insert the ready-to-bake pan in the oven.
  19. Wait for it to bake till the cake forms but jiggles from the center upon shaking.
  20. It might take 40/45 minutes.
  21. Let it come to the normal surrounding temperature once the baked pan is out of the oven.
  22. Separate the cake from the pan walls with great care with the help of a knife once it gets cool down.
  23. Turn the pan upside down to shift the cake to the serving plate.
  24. Your cake is ready to serve.

TIPS:

It is better to use a glass/ceramic baking pan. A metal baking pan will heat up faster in the oven. There are the chances of cake cooking from the outside & remaining liquid from the inside if using a metal pan.

Following removal from the oven, the cake will not be firm from the center. You don’t need to panic. It will solidify as it cools down.

It would be fine if you used the pre-made pumpkin spice. If you make extra effort to use fresh ground pumpkin spice, then the taste & aroma will go to the next level.

STORAGE INFORMATION:

As it contains cream cheese, keep it chill all the time.

FRIDGE:
Pack the remaining pumpkin spice earthquake cake in a locked container. Consume them within 5-6 days by keeping them chill in the fridge.
