Here’s the full recipe for Keto Reese’s Cups, along with its nutrition facts and servings:

Ingredients:

  • 1/2 cup sugar-free dark chocolate chips
  • 1 tablespoon coconut oil
  • 1/4 cup natural peanut butter (no added sugars or oils)
  • 1 tablespoon powdered erythritol (or your preferred keto-friendly sweetener)
  • 1/4 teaspoon vanilla extract
  • Pinch of salt

Instructions:

  1. In a microwave-safe bowl, combine the sugar-free dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until the chocolate is fully melted and smooth.
  2. Line a mini muffin tin with 8 mini muffin liners.
  3. Spoon approximately half a teaspoon of melted chocolate into each liner, spreading it evenly across the bottom and slightly up the sides. Place the muffin tin in the freezer for about 10 minutes, or until the chocolate hardens.
  4. While the chocolate is setting, prepare the peanut butter filling. In a small bowl, mix together the natural peanut butter, powdered erythritol, vanilla extract, and salt until well combined.
  5. Once the chocolate has hardened, remove the muffin tin from the freezer. Place approximately half a teaspoon of the peanut butter filling into each chocolate-lined cup, gently pressing it down to create a flat surface.
  6. Pour the remaining melted chocolate over the peanut butter filling, ensuring it covers the cups completely and seals the edges.
  7. Return the muffin tin to the freezer for another 10-15 minutes, or until the chocolate is fully set.
  8. Once set, remove the Keto Reese’s Cups from the muffin tin and store them in an airtight container in the refrigerator until ready to serve.
