INSTRUCTIONS:

  1. Warm the oven to 175 °C & place the liners(paper/muffin) in each muffin tin.
  2. Include & mix salt, baking powder, cinnamon powder, flour of almond & coconut in a big bowl.
  3. Include the melted butter & sweetener in a separate bowl and whisk until white & smooth.
  4. Now, start adding eggs one by one while mixing in between each addition.
  5. Then, go for the mixing of almond milk and the essence of vanilla.
  6. Transfer the liquid mix to the dry items mix.
  7. Mix with gentle hands to just combine everything properly.
  8. Next, pour the batter into all the cups of muffins, filling them only three-fourths each.
  9. Grab a small bowl & combine the cinnamon powder along with the keto sweetener.
  10. Cover the surface of each muffin using the cinnamon sugar you just made.
  11. Keep the muffin tin in the oven for ~twenty mins.

  • Save the muffins(cooled & leftover) in a jar/container with a lid(airtight). Refrigerate them for ~five days. You need to warm them up a bit right before serving.

FREEZING:

  • Pack each muffin individually using cling wrap. Then, keep them all in a bag(freezer-safe). That’s how you can freeze them for ~ninety days. If you plan to serve them, defrost them a night earlier; otherwise, they can be reheated directly from the frozen state at 150 °C for ten(10) mins.

What might be the reason that my muffins deflate after baking?

  • You need to stick to the proper measurements while following the recipe. Use a knife to test the cake by sticking it in the middle. If the knife comes out without any traces of cake, your muffins are done baking. This will also never let your muffins deflate.
