It is perfect to have this pudding in the keto diet because it is made with all keto-friendly ingredients like coconut cream, coconut milk, fresh strawberries, Erythritol, and Greek yogurt. This pudding contains only 6g of net carbs and 2g of fiber. You can easily store this strawberry pudding in the fridge for 3 days, but consuming it within 2 days is best. We can also freeze this Keto Strawberry Pudding for 1 month, but it might lose its texture after thawing. This strawberry pudding is gluten-free and nut-free but it is not dairy-free because it contains Greek yogurt however we can substitute Greek yogurt with coconut yogurt to make this dessert completely dairy-free.

INGREDIENTS:

FOR THE PUDDING BASE:

  • 2 cups unsweetened coconut milk
  • ¾ cup full-fat coconut cream
  • ½ cup Erythritol
  • 1 tablespoon vanilla extract
  • 3 large egg yolks
  • 1 tablespoon xanthan gum
  • Salt

PUDDING BASE MIX-INS:

  • ½ cup full-fat Greek yogurt
  • ½ cup fresh strawberries
  • ½ cup fresh raspberries
  • 1 tablespoon Stevia (pure extracts)

FOR THE TOPPINGS:

INSTRUCTIONS:

PREPARE THE PUDDING:

  1. Put the saucepan on medium heat.
  2. Pour the coconut milk, full-fat coconut cream, Erythritol, salt, and vanilla extract.
  3. Mix it after some intervals till the mixture gets warm but does not boil.
  4. Take a bowl and add the 3 egg yolks.
  5. Mix them with the whisk add the little quantity of milk in the eggs and slowly mix with the eggs to temper the eggs.
  6. Then pour the tempered eggs slowly into the saucepan and whisk during the pouring of egg yolks.
  7. We can continue the mixing till the mixture gets thickened.
  8. When the mixture gets thick then put the saucepan on the shelf add the xanthan gum or gelatin.
  9. Mix the mixture well to eliminate any lumps.
  10. Put the pudding in the fridge to chill for at least 2 hours.

PREPARE THE PUDDING MIX-INS:

  1. Take a separate bowl and add the Greek yogurt and stevia(pure extract).
  2. Mix it with the whisk till the stevia gets properly combined.
  3. Then add the strawberries in the Greek Yogurt and gently fold in the yogurt.

ASSEMBLE THE PUDDING:

  • When the pudding gets properly chilled in the fridge adds the yogurt and berry mixture to the pudding.
  • Mix it gently to incorporate with each other.
