EQUIPMENT:

INGREDIENTS:

  • 1lb. ground beef
  • 3 tbsp. taco seasoning
  • 4 cups bone broth of beef
  • 2 14.5 oz. of cans of diced tomatoes
  • ¾ cup of ranch dressing

INGREDIENT NOTES:

GROUNFD BEFF:

  • Any type of ground beef would do, but I use 85/15.
  • Other options include ground chicken, ground turkey, shredded carne asada, or shreds of chicken for a Mexican soup of chicken.

SEASONING OF TACO:

  • Powdered chili, cumin powder, salt, powder of pepper, smoked paprika powder, dried oregano, powder of garlic, powder of onion, and powder of cayenne pepper are some of the ingredients I like to use in my homemade taco seasoning mix.
  • Another option is to purchase a store-bought blend. Include one tbsp. of salt in one pound of beef while it’s cooking, and taste it at the end if your spices don’t include salt.

BROTH:

  • For added nutritional value, I used homemade bone broth in this recipe taco soup, but you may also use store-bought poultry stock, beef bone broth, ordinary beef broth, or veggie broth.

DICED TOMATOES:

  • Kindly do not trench the canned diced tomatoes because there is a requirement for this liquid in the recipe of soup.
  • Salsa jar, sliced tomatoes with sliced green chilies, or roasted tomatoes would also be excellent.

RANCH DRESSING:

  • For convenience, I used store-bought ranch dressing, but I prepared my own (it only takes five minutes!).
  • Greek yogurt might be a good alternative if you don’t have any on hand or don’t want to create it, but it won’t taste as good as ranch.

INSTRUCTIONS:

BROWN THE BEEF:

  1. Place the meat in the bottom of a big saucepan or large Dutch oven.
  2. Cook over medium-high heat until it is no longer pink. If desired, drain.

ADD THE SEASONING:

  1. Add 3/4 cup of stock and taco seasoning.
  2. Reduce the heat till most of the water content get evaporated. (In essence, this is my taco meat, but with broth.)

REDUCE THE HEAT:

  1. Add additional taco spice, chopped tomatoes, and broth. Mix everything.
  2. To develop the flavors, bring to a mild boil and then simmer.

INCLUDE RENCH:

  1. Put the soup on the stove.
  2. Add ranch dressing and stir.
  3. Use your preferred toppings as garnish.

ALTERNATIVE COOKING METHOD:

CROCK POT:

  • To prepare taco soup in a crock pot, just brown the beef using the stovetop method.
  • Then cook it in a slow cooker set to either high for one to two hours or Low for three to four hours.
  • Just before serving, stir in the dressing.

INSTANT POT:

  • Utilize the bottom of the sauce pan to brown the fillet for the Instant Pot taco soup.
  • After adding the 3/4 cup of stock and taco spice, sauté until the liquid is gone.
  • Using the Manual button, cook on pressure (high) for five minutes after closing the lid and turning the knob to Sealing.
  • Without using any heat, use the quick release and whisk in the ranch dressing.

TIPS:

  • You can utilize crock pot or instant pot to make this soup of taco.
  • This taco soup is easily stored and great to make ahead of time.

STORAGE INFORMATION:

FRIDGE:

  • Taco soup recipes are best stored when allowed to cool fully before being poured into an airtight container. Keep for 3-4 days.

FREEZER:

  • Transfer the taco soup to a sealed container and store it for six months.
    Put the container in water to thaw the taco soup or put it in the refrigerator to thaw for the whole night.

WARM-UP AGAIN:

  • Reheating leftover taco soup may be done on the stove over heat (medium) or in the microwave.
