INGREDIENTS:
- 2 Tbsp. coconut oil
- 3 pieces of garlic (minced)
- One shallot (minced)
- 3-4 dried Thai chiles (crushed)
- 1 ½ lb. chicken thigh (boneless & skinless)
- ½ medium red peppers (chopped)
- 2 tbsp. fish sauce
- 1 tsp. tamari
- ½ cup Thai basil leaves
- ¼ tsp. pepper
- Red pepper flakes (additional & to taste)

INSTRUCTION:
- Take a saute pan (large) and put it on heat (medium).
- Heat the pan after adding the two tablespoons of coconut oil.
- Then add 1 shallot (minced) and 3 pieces of garlic to the pan and cook it till you get a nice aroma.
- Then add 3-4 Thai chilies (dried & crushed) and cook it for another 30 sec.
- Include the 1 ½ lb. chicken and red pepper flakes (to taste) and stir fry the chicken to remove its pink color for 7 mints. Include the 2 tbsp. Fish sauce and 1 tsp. Tamari in the pan.
- Add the ¼ cup of Thai basil leaves and mix it to combine well cook it for about a mint.
- Put the pan aside adds some pepper and taste the dish to adjust the seasoning.
- Serve it with lettuce wrap or cauliflower rice.
TIPS:
- I use thigh of chicken (without bone and skin); you can also use breast of chicken as well.
- I use simple Thai basil leaves for this keto recipe. Do not use the sweet variety of basil from the store; it is not the keto-friendly.
- Instead of soy sauce, you may use coconut aminos or tamari.

- Put this Thai basil chicken in a closed container and stock it for 3-4 days.
FREEZER:
- Put this Thai basil chicken in the zip-lock bag when it is cooled down and stock it up for around 3 months.
REHEAT:
- Reheat your Thai basil chicken in the microwave or on the stove on medium flame. If the chicken in the freezer defrosted in the refrigeration in the past night then reheat it.

Will we use coconut aminos in place of tamari?
- You can use coconut aminos in place of tamari but it has more carbs than tamari and also does not have a strong umami flavor in it.

- We can put this Thai chicken in a sealed container for 3-4 days and store it in the fridge and 4 months in the freezer.
May we use any other oil?
- You can use avocado oil or any neutral keto-friendly oil of your choice.
