INGREDIENTS:
- Two-thirds cup of whipping cream (heavy)
- Oil of olives, 2 tbsp
- Parmesan (grated), one oz
- Slices of 2 celery ribs
- One-fourth cup of basil leaves (fresh)
- Onion (chopped), a quarter cup
- Chicken broth, 3 cups
- Three-quarter tsp of salt
- 1.5 pounds of zucchini, chopped
- Powdered peppercorn, 0.5 tsp
- A quarter teaspoon of pepper flakes (red)

INGREDIENT NOTES:
ONION:
Use onion for taste & its traditional crunch. Include celery in it also.
CHICKEN BROTH:
We are using commercial chicken broth here. It is better to use the homemade version, as it is a healthier option in our opinion. You may use the bone broth, veggie broth, or beef broth.
Oil of olives:
We need oil to sauté the veggies. You may use oil from avocado or sunflower seeds.
HEAVY CREAM:
The addition of heavy cream will have the soup loaded with creaminess. If you prefer a thinner version of soup, then go for half & half, or milk. To go for the non-dairy version, use coconut milk (full-fat).
ZUCCHINI:
You should have the knowledge that which type of zucchini tastes great. Always buy the small/normal-sized zucchini. You will get the fresh & tasty ones.
GARLIC:
Use the fresh garlic (minced) to have an authentic & strong flavor. In case of non-availability, you may use the jarred/powdered garlic.
INSTRUCTIONS:
- Place a big pot over the normal flame.
- Include oil in it to heat up.
- As it gets hot, include onions & celery.
- Fry them till they become soft.
- Now add garlic & flakes of red pepper.
- Saute until garlic begins to smell in a nice way.
- At this point, include the zucchini in it.
- Coat it well & sauté till it starts to become soft.
- Now include the broth in it & bring it to a simmer.
- Cook on normal heat till the zucchini becomes well tender.
- Turn the flame off & include basil and parmesan.
- Wait for the parmesan to melt and the leaves of basil to become a little soft.
- At this point, blend the soup using the immersion blender.
- At the last, include cream (heavy) in it.
- Include salt & powdered peppercorn if you need to.
- Then mix to combine well, & your soup is ready.
TIPS:
While working with the blender, exercise caution while shifting the hot soup to the blender. Otherwise, you will get yourself burnt. It will be more safe to use the immersion blender if you have one.
Try to use the small-sized fresh zucchini, as they have a great taste. You may use the large zucchini without seeds.
