We prepare these fritters with ripe tomatoes, onion, feta cheese, egg, flour, olive oil, parsley, mint, oregano, paprika, and garlic. INGREDIENTS:

TOMATO FRITTERS:

  • 500 g ripe tomatoes
  • 1 onion
  • ½ tsp salt
  • 2 cloves garlic
  • 60 g feta cheese
  • ¼ cup parsley
  • 2 tbsp mint
  • 1 tsp oregano
  • ½ tsp paprika
  • ¼ tsp black pepper
  • 1 egg
  • ½ cup flour
  • Olive oil, two tbsp.

TOMATO YOGURT DIP:

  • 1 cup Greek yogurt
  • ¼ tsp black pepper
  • ¼ cup tomatoes
  • One clove garlic
  • Olive oil, one tbsp.
  • One tbsp. lemon juice
  • 1 tbsp parsley
  • ¼ tsp oregano
  • Salt

INGREDIENT NOTES AND THEIR SUBSTITUTIONS:

TOMATOES:

  • We use ripe but firm tomatoes to provide fresh flavor and moisture. Canned tomatoes can also be used if they are thoroughly drained.

FETA CHEESE:

  • Feta provides a salty and creamy Mediterranean flavor. Goat cheese can also be used as another choice.

MINT:

  • Fresh mint gives the fritters a refreshing herbal flavor. Fresh dill can be utilized as a different option.

FLOUR:

  • All-purpose flour helps bind the fritters and creates a light texture.

GREEK YOGURT:

  • Greek yogurt creates a thick and creamy dip. Labneh can also be utilized as another choice.

TOMATOES:

  • Sun-dried tomatoes provide a rich and tangy flavor to the dip. Oil-packed sun-dried tomatoes are preferred.

OLIVE OIL:

  • Olive oil provides richness and classic Mediterranean flavor. Regular olive oil can also be used.

INSTRUCTIONS:

  1. Strain the chopped tomatoes perfectly to eliminate extra liquid.
  2. Include the salt, tomatoes, pepper, onion, paprika, garlic, feta, oregano, parsley, and mint in a dish.
  3. Stir the olive oil and egg, include the flour & whisk till a thick mixture is prepared.
  4. Blend all the dip ingredients in a separate dish and chill.
  5. Warm the olive oil in a skillet pan, and include about 2 tbsp. of the tomato mixture for all the fritters and flatten gently.
  6. Cook the fritters for about three minutes on every side till crisp and golden.
  7. Put the fritters on paper towels.
  8. Serve the hot fritters with the refrigerated sun-dried tomato yogurt dip.
