INGREDIENT NOTES:
PUMPKIN PUREE:
- Include the pure pumpkin puree to provide a moist texture and natural pumpkin flavor to these cookies. We have to use plain pumpkin puree instead of pumpkin pie filling because the filling already contains added sugar and spices.
PEANUT BUTTER:
- Include the creamy peanut butter to provide a rich flavor and help bind the ingredients. We have to stir natural peanut butter properly before measuring to create a smooth texture.
ROLLED OATS:
- Include the rolled oats to provide a hearty, chewy texture to these cookies. We can use certified gluten-free oats if needed, but the all-purpose flour must also be replaced with a gluten-free alternative.
ALL-PURPOSE FLOUR:
- Add this flour to provide the structure and shape. We have to measure the flour with care so the dough will not become dry.
