INGREDIENT NOTES:

CRANBERRY SAUCE:

  • Include the cranberry sauce to prepare the sweet & tangy pan glaze. The cranberry sauce should be of good quality to provide a rich flavor & help balance the savory chicken before serving.

CHICKEN BREASTS:

  • Include the boneless, skinless chicken breasts to provide a high-protein base for this dish. We have to cut a pocket into each breast without slicing it completely through so the filling stays inside and cooks properly.

BABY SPINACH:

  • Include the fresh baby spinach to add a mild, earthy flavor & tender texture to the stuffed chicken.

BRIE CHEESE:

  • Include the Brie cheese to make it creamy & rich stuffed chicken. We have to slice it thinly so it melts evenly inside the chicken. For a dairy-free version, utilize a plant-based Brie-style cheese.

INSTRUCTIONS:

  1. Heat the oven and apply the oil lightly to the dish.
  2. Dry the chicken properly, then put them on the cutting board, then make the pockets in the fillet from the thick side carefully.
  3. Add all the seasonings in the small vessel, then mix and apply them to the outer surface of these pockets.
  4. Add the soft cream cheese, spinach, & dried cranberries in the mixing vessel and mix to combine them.
  5. Put the brie slices inside each chicken fillet, then include the mixture equally in each pocket and close them with kitchen twine.
  6. Add the oil in pan and warm it on medium to high flame.
  7. Then sear the chicken breasts for two to three minutes on each side till they get golden.
  8. Take a small pan and add the cranberry sauce, honey, orange juice, Dijon mustard, chicken broth, and orange zest in it; whisk and cook for three to five minutes.
  9. Include the ½ cup chicken broth, lemon juice, & butter in the dish, and add a small quantity of the glaze over each chicken pocket.
  10. Now add the pan in the oven and bake for twenty to thirty minutes till it gets to 74° C.
  11. Apply the extra cranberry glaze in the last ten minutes.
  12. When the chicken gets cooked, then leave it for five minutes then remove the kitchen twine.
  13. Now add the warm sauce to the chicken and sprinkle the thyme, orange zest, parsley, or cranberries if required.
