INGREDIENTS:
- One boneless leg of lamb
- ½ tsp. salt
- ¼ tsp. pepper
- ½ cup Sambal Oelek
- 1 tbsp. chili powder

LEG OF LAMB:
- I use boneless, deep pink, marble cuts of lamb to prepare the smoky leg of lamb. You can also utilize bone in the legs of lamb to prepare this dish.
CHILI POWDER:
- I use chili powder to give this dish a spicy punch but if you don’t tolerate spice you can reduce the amount of spice to half a tablespoon.
SALT & PEPPER:
- I use salt & pepper to season the lamb legs.
SAMBAL OELEK:
- It is an Indonesian chili paste; it adds a smoky & tangy flavor to the dish. You can easily replace this with Sriracha or Harissa if it is not available in your area.

INSTRUCTION:
- Heat the smoker at two-fifty degrees F with your preferred hardwood.
- If you have any excess fat then cut the fat caps with the knife and leave some for taste.
- Apply the black pepper powder & salt to the lamb caveats.
- Then tie the lamb with the kitchen twine and season the lamb from the exterior side with Sambal oelek, black pepper, and salt.
- Put the lamb from the fat side on the smoker, & smoke them for 3 hours.
- When it is done you can sear the lamb on the grill out leave it in the same way.
- Put the lamb on the board and put it in the corner for some time.
- Then slice the lamb with the knife.

- Heat the oven to 275 degrees F.
- Pat dries the lamb with a paper towel.
- Apply the pepper powder, chili powder, salt, & sambal oelek on the lamb and rub the spices gently over it; allow it to marinate for 2 hours.
- Put the soaked wood chips in the bottom rack to make this dish smoky.
- Place the lamb in the roasting pan bake the leg of lamb for two & ½ hours.
- When it is done put it out in the corner for some time.
- Slice the lamb with the knife.

RECIPE VARIATION:
- We can season this lamb with a variety of other seasonings like Italian, Greek, or Moroccan seasoning blends.
- We can also sprinkle some dried herbs like oregano, rosemary, or thyme over the lamb.
- If we don’t find the sambal oelek then we can substitute this with the combination of Dijon mustard, garlic, keto-friendly honey, & balsamic vinegar. This creates a tangy & sweet contrast; you can also add Sriracha or harissa to it.
- You can also marinade these legs of lamb with some tasty marinades like lamb chops marinades or make an authentic Greek marinade with pepper powder, salt, olive oil, garlic, & lemon juice.
- We can utilize different flavor woods to smoke this lamb like oak, apple, mesquite, cherry, pecan, or hickory wood chips for this purpose.
TIPS:
- Cut the excess fat cap on the lamb with the sharp knife and leave only a little to give it some taste.
- It is not necessary to sear the lamb chops but if you can sear them it can give a nice charred crust from the outside.
- When it is done put it in the corner for 10 to 15 minutes to preserve the juices in them then slice the lamb with the knife.
