Recipe: Keto Chocolate Loaf Cake

Ingredients:

For the Cake:
  • 1 1/2 cups almond flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup granulated erythritol or your preferred keto-friendly sweetener
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3 large eggs
  • 1/4 cup unsalted butter, melted
  • 1/4 cup coconut oil, melted
  • 1/2 cup unsweetened almond milk
  • 1 tsp vanilla extract
  • 1/2 cup sugar-free chocolate chips (optional)
For the Chocolate Glaze:
  • 1/4 cup sugar-free chocolate chips
  • 1 tbsp coconut oil

Instructions:

1. Preheat and Prepare:
  • Preheat your oven to 325°F (160°C). Grease a 9×5-inch loaf pan and line it with parchment paper for easy removal.
2. Mix Dry Ingredients:
  • In a mixing bowl, whisk together the almond flour, unsweetened cocoa powder, granulated erythritol (or your chosen sweetener), baking powder, baking soda, and salt until well combined.
3. Combine Wet Ingredients:
  • In another bowl, whisk the eggs, melted butter, melted coconut oil, almond milk, and vanilla extract until smooth.
4. Combine Wet and Dry Mixtures:
  • Pour the wet mixture into the dry mixture and stir until everything is well combined. If desired, fold in the sugar-free chocolate chips.
5. Bake:
  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake in the preheated oven for 45-55 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs attached.
6. Cool:
  • Allow the cake to cool in the pan for about 10 minutes, then remove it from the pan and let it cool completely on a wire rack.
7. Prepare the Chocolate Glaze:
  • In a microwave-safe bowl, combine the sugar-free chocolate chips and coconut oil. Microwave in 20-second intervals, stirring between each, until the mixture is smooth and melted.
8. Glaze the Cake:
  • Once the cake is completely cool, drizzle the chocolate glaze over the top.
