Keto Creamy Taco Zoodle Casserole. I love tacos and I mean LOVE. But I can’t have tacos everyday, I know… or can I? I created this taco zoodle casserole because I had to recreate a traditional taco and bring the flavor to something else!
THE PREPARATION
- 3 medium zucchini, spiralized
- 16 ounce ground beef
- 10 ounce canned tomatoes with green chiles
- 2 teaspoon fresh garlic, minced
- 1 cup unsweetened almond milk
- 1/4 cup heavy cream
- 3 ounce cream cheese
- 1 cup cheddar cheese, shredded
- 1 tablespoon chili powder
- ONE teaspoon cumin
- 1/2 teaspoon black pepper
- 1/2 teaspoon smoked paprika
- 1 tablespoon butter
- 1/2 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
THE EXECUTION
1. Measure out and prepare all of the ingredients.
2. Preheat oven to 350F.
3. With cooking spray, spray a baking pan or drizzle with olive oil.
4. Into the bottom of the pan, arrange the spiralized zucchini. Until all the moisture is removed from the pan, bake this in the oven. Take out every TEN minutes to stir.
5. Combine the seasonings in a bowl for the taco seasoning: onion powder, cumin, black pepper, smoked paprika, dried oregano, garlic, and chili powder. Stir together well.
6. Add the ground beef to a skillet over medium heat. About 7-8 minutes, cook until it gets brown.
7. With green chiles, stir in the canned tomatoes and the taco seasoning. Put it aside.
8. Add the shredded cheddar cheese, minced garlic, almond milk, heavy cream, cream cheese, and butter in a skillet over medium heat. Until everything is melted and a sauce is formed, whisk this together, then remove from heat.
9. Into the zoodle pan, layer in the sauce and the taco meat. Top with the shredded cheese and for THIRTY minutes, bake in the oven or until it gets golden.
9. Serve immediately and enjoy!
