Haddock

  • I prefer to use wild and sustainably raised haddock instead of farm-raised. Wild haddock is more delicious and flavorful and has a firm texture which makes it better for grilling. Frozen haddock is also used by defrosting it before use.

Olive oil

  • It is used to rub oil on the fish and the grill gates.

Salt and pepper (black)

  • Salt and pepper(black) are sprinkled on the fish to season it. It can develop haddock natural buttery-sweet flavor.

Lemon slice and parsley

  • You can add the lemon and parsley while serving. It can beautifully decorate the dish also brighten it up.

INSTRUCTIONS

Seasoned the fish

  1. First, wash the fish with the tap water.
  2. Dry the fish using a paper towel.
  3. Apply the oil on both sides.
  4. Toss it with pepper (black) and salt to add the flavor.

Prepare the grill

  1. Wash the grill with water and dry it using a towel(paper).
  2. Heat it to medium-high heat.
  3. Brush the oil on the grill.
  4. Put the fish on the grill(heated).

Grill the fish

  1. Properly grill the fish from both sides until it becomes smoky or opaque and the meat of haddock shredded easily with a fork.
  2. With the aid of tongs, serve it and decorate it using a slice (lemon).

TIPS

Room temperature

  • If you are using frozen fish, then wait for it to come at room temperature. It can grill easily at room temperature. Otherwise, it might remain undercooked or not cooked evenly.

Meat thermometer

  • Check the haddock temperature during cooking; it should be around one forty to one-forty-five degrees Fahrenheit. If it gets overcooked its meat becomes chewy.

Seasoning

  • I only add powdered pepper (black) and salt and toss it. You can use lemon pepper, Cajun spices, or Italian seasoning if you like to have more taste.

Marinade the fish

  • Mix all the ingredients which include lemon juice, zest, Italian seasoning salt, garlic, and soy sauce, and marinate for twenty-five to thirty minutes. Don’t increase the time of the marination otherwise the fish will become mushy.

STORAGE INFORMATION

Fridge

  • When the fish comes to room temperature, stock it up in a sealed container for around three days.

To freeze

  • When the fish cool down, pack the fillets of haddock in a sealed bag or container and stock it for around 3 months. Before heating the haddock, allow it to melt in the fridge.

Reheat

  • Reheat it in the pan with butter until it gets tender. You can also microwave the fish for twenty-five to thirty minutes.
