Keto Hash Browns

There’s no need to lose out on the classic hash browns prepared with potatoes with these simple low carb Keto Hash Browns! Keto comfort cuisine without gluten.


We’ve been eating them with fried eggs for morning, with homemade mayonnaise for a snack in the afternoon, and as a side dish for dinner the next night after I made a HUGE batch of them as a result of thorough recipe testing. Sincerely, I am unable to say when time of day they perform best.

The ideal all-day food turns out to be cauliflower fritters.
When following a low carb diet, you should avoid eating potatoes and other white carbohydrates like rice. Cauliflower also functions admirably as a substitute. This vegetable is really adaptable!

As a side dish to major courses, I frequently make cauliflower rice or cauliflower mash (with cheese and occasionally celeriac root). Lunchtime favorites in this home include roasted cauliflower steaks and truffle oil-infused cauliflower soup. Sometimes people claim that cauliflower tastes like an old sock (I can hear all the cauliflower lovers gasping in unison!). The fact is that, like all vegetables, cauliflower is at its finest when used FRESH. Make sure the cauliflower is white, firm, and try to purchase heads with the leaves still on. It won’t taste its finest after two weeks of sulking in the bottom drawer of your refrigerator and the tops of the florets are turning brown.

Because it has a very neutral flavor, fresh cauliflower is a very versatile dish.

Turmeric, which turns these cauliflower hash browns from excellent to extraordinary, is responsible for their bright yellow color.


1.) Break the cauliflower into florets and mix it in a food processor until you have fine crumbs. Otherwise, use a box grater to grind the cauliflower.


You have two choices:

Option 1: 2 minutes in the microwave for the cauliflower rice. Lay out the crumbs on a tea towel and let them to cool for a moment (easier and quicker option).

Option 2: Salt the uncooked cauliflower crumbs and set them aside for at least 20 minutes. This aids in drawing the liquid out.

You should now gather the dish towel and SQUEEZE as much juice as you can from the cauliflower. When you believe you’ve squeezed enough, squeeze some more. Squeeze from all sides.

I was able to fill my dish with 200 cc of liquid. Aim for at least half a cup.

3.) Can you make out the white blob up top? Your cauliflower will seem like that once the liquid has been removed from it.

All the ingredients—except the eggs—are now added, and they are all combined with a fork.

4. Include the eggs.

Your dough will be sticky, but not moist, as seen in figure 5.

6.) Create balls that are about the size of golf balls…

7.)… and put mixture on a cookie sheet(flat)(lined with parchment paper).

Top Tip: Use the underside of a conventional baking pan turned upside down if you don’t have a flat tray. This prevents moisture from condensing on the sides, giving you cauliflower hash browns that are more crisp.

8.) Take the fritters out of the oven when the bottom and outer edges are browned. It ought should take about 20 minutes.

And this is what your finished cauliflower fritters will look like! Both the outside and the interior are soft. Yum.


I prefer to bake my cauliflower hash browns since I can prepare a bigger quantity and there is less cleanup afterward.

So they don’t burn, make sure to do this on a medium heat(4–5 minutes).

Coconut flour, a favorite low-carb flour of mine right now, is used in this fritter recipe. Alternatively, you may use almond flour. To use coconut flour, multiply the recommended dosage by two.

Would you like to try some additional spices? This recipe might benefit from cumin.
Lacking cheddar? You can use pecorino or parmesan cheese as an alternative. If you went with the latter option, you can probably omit the salt because pecorino is already quite salty.

Keto cauliflower fritters can be frozen or kept in the refrigerator for a few days. Put them in the oven(few minutes).

  • 1 small cauliflower (450g/1 pound),
  • 2 tablespoons chopped scallions or spring onions,
  • 2 eggs, 1/4 teaspoon each of turmeric and garlic powder,
  • 1/2 cup (50g) grated mature cheddar,
  • 3 tablespoons coconut flour,
  • 1/4 teaspoon each of baking powder, and a dash of salt.


  1. Set the oven’s temperature to 400 degrees.
  2. Cauliflower should be broken up into florets and processed in a food processor until it resembles rice, if you have one. 2-3 rounds may be required for this. Use a box grater as an alternative.
  3. For two minutes, microwave the cauliflower. Spread the mixture out and let it to cool a little before using. Then gather the tea towel and shape a cauliflower ball.
  4. Squeeze the cauliflower to remove as much liquid as you can. (more than 3/4 cup!)
    Refill the bowl with the riced cauliflower, then stir in the remaining ingredients.
  5. Form dough balls with your hands, and then put them on a parchment-lined flat baking sheet or an upside-down standard baking tray. The cauliflower fritters become crispier since no moisture is retained on the sides in this manner.
  6. Bake for EIGHTEEN-TWENTY mins(edges are lightly brown)


You can alternatively cook these cauliflower hash browns over medium heat in a nonstick pan. Use either butter or oil. Each side takes about four minutes.

Serve with a straightforward homemade mayonnaise or another preferred dipping sauce.
