- We ground the hazelnuts in our food processor to have the almond meal for the cookies at home. You may also use the flour of hazelnuts for these cookies.
EGGS:
- Keep in mind that always use eggs at normal temperatures for baking. Here we can’t use any replacement of eggs.

- This recipe uses erythritol & stevia glycerite to sweeten the hazelnut cookies in a natural way.

- Use the crushed hazelnuts to decorate the top of the cookies.

INSTRUCTIONS:
- Heat the empty oven to 320 degrees F.
- Use a silicone mat or parchment to cover a baking sheet.
- Pick a big vessel & include the egg whites in it.
- Use the electric mixer (hand/stand) to beat the whites till the peak (stiff) formation.
- Include the hazelnut meal, sweetener, and essence of vanilla into the egg whites(whipped).
- Fold them well with gentle hands into the egg whites.
- Taste the dough to regulate the sweetness as per your taste.
- Use a spoon to transfer the dough to the prepared baking sheet at a proper distance.
- Make them flat a little using the back of the same spoon.
- Shift the baking sheet to the oven & hold off until they begin to change color.

TIPS:
- The dough will be stickier thus, difficult to handle. It is because of the egg whites(whipped). This will give us lighter & tastier cookies after baking. If you don’t have time to whip the whites of the egg or you want the firmer dough that will be easy to handle.

- Pack the cookies in the resealable jar, keeping them away from humidity.
AT THE NORMAL TEMPERATURE:
- You may keep the jar of cookies anywhere with you. These cookies won’t need the chiller for 2/3 days. You can enjoy them by keeping them at the counter, or bedside, or taking them with you.
IN THE FRIDGE:
- If you have the cookies remaining still after 3 days, then shift the jar with cookies in the fridge. Enjoy the cookies for a week whenever you want. Happy snacking!

- You know that whipping gives the ability to hold more air to the batter. This process will have you lighter cookies with a soft center. You have the choice to skip this step if you are short on time.
If the market doesn’t supply the flour of hazelnut, what should I do?
- There is no need to worry if you don’t get the hazelnut flour from the store. Plug in your food processor & process the hazelnuts in it. You have the coarse ground hazelnut meal.
