Keto Peanut Butter Cheesecake Bites

You’ll want more of these delicious Keto Peanut Butter Cheesecake Bites, which are a no-bake, high-fat, low-carb dessert.

It’s accurate to say that lately, I’ve been on a cheesecake kick.

Joe recently got some incredible silicone baking cups, and they have really changed the game.

Delicious.

So, inspiration struck when we were surfing Facebook and kind of remembering these Peanut Butter Cups I made last Autumn, in addition to these delicious fudge bars.

What if cheesecake filling could be used to make Peanut Butter Cups?

Then the concept was created.

Another quick and simple Keto dish is this one. The baking cups (affiliate) make a significant difference in the structure and cleanup, so I’d heartily recommend them. More than a couple pieces of these peanut butter cheesecake bites are a great serving size!

All you need is heavy whipping cream, cream cheese, erythritol (I use Swerve), peanut butter, and chocolate (my favorite brand is Lily’s). Erythritol-sweetened) and Coconut Oil.

8 ounces of melted cream cheese, 1/4 cup of erythritol, and 1 teaspoon of vanilla extract
1/4 cup heavy cream for whipping
peanut butter, 1/4 cup
Lily’s Sugar Free Chocolate, 1/4 cup (I used 1.5 bars)
Coconut oil, two teaspoons

Instructions

  1. Cream cheese, erythritol, and heavy whipping cream should be thoroughly combined.
  2. Peanut butter and vanilla extract should be thoroughly mixed before being added.
  3. Combine coconut oil and melted chocolate.
  4. Place silicone cups in the freezer for 5 minutes after coating with chocolate mixture (I use these).
  5. Repetition of the preceding step and a 10-minute freeze
  6. 15 minutes should be spent freezing a cup with a few spoonfuls of cheesecake fluff.
  7. To coat cheesecake fluff, drizzle chocolate over each cup.
  8. Refrigerate for an hour or freeze covered for 20 minutes.

Notes

Once they originally set, I discovered that these kept better in the refrigerator.

Allow 10-15 minutes for food to thaw if you store it in the freezer before eating.

Use just natural peanut butter without any sugar added.
