  • 1 medium head cauliflower, cut into florets
  • 2 tablespoons butter
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 4 cups chicken or vegetable broth (preferably low-sodium)
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Toppings (optional): shredded cheddar cheese, crispy bacon bits, chopped green onions


  1. In a large pot, melt the butter over medium heat. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent and fragrant.
  2. Add the cauliflower florets to the pot and stir well to combine with the onion and garlic. Cook for a few minutes until the cauliflower starts to soften.
  3. Pour in the chicken or vegetable broth, ensuring that the cauliflower is fully submerged. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 15-20 minutes, or until the cauliflower is tender.
