Ingredients:

  • 1 medium head cauliflower, cut into florets
  • 2 tablespoons butter
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 4 cups chicken or vegetable broth (preferably low-sodium)
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Toppings (optional): shredded cheddar cheese, crispy bacon bits, chopped green onions

Instructions:

  1. In a large pot, melt the butter over medium heat. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent and fragrant.
  2. Add the cauliflower florets to the pot and stir well to combine with the onion and garlic. Cook for a few minutes until the cauliflower starts to soften.
  3. Pour in the chicken or vegetable broth, ensuring that the cauliflower is fully submerged. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 15-20 minutes, or until the cauliflower is tender.
  4. Using an immersion blender or a regular blender, carefully puree the soup until smooth and creamy. If using a regular blender, work in batches, allowing the steam to escape by removing the center cap of the blender lid and covering it with a clean kitchen towel.
  5. Return the blended soup to the pot over low heat. Stir in the heavy cream and dried thyme. Season with salt and pepper to taste. Continue to heat the soup until it is hot throughout, but avoid boiling it.
  6. Once the soup is heated, ladle it into serving bowls. If desired, top each bowl with shredded cheddar cheese, crispy bacon bits, and chopped green onions for added flavor and texture.
  7. Serve the Keto-Friendly Cauliflower Potato Soup hot and enjoy!
