INSTRUCTIONS
PREPARATION:
- Place a twelve-pound turkey on the cutting board, breast side down with tail facing in your direction.
- Dry it with a paper towel.
- Locate the backbone with the help of kitchen shears, start cutting from the tail end, and continue to cut all the way to the neck.
- Repeat this process on the other side; also remove any excess loose skin.
- Save the backbone to obtain dripping for turkey gravy.
- Turn over the turkey and flatten the breast bone with your hands until it gets splayed.

BRINING TURKEY:
