Keto Tomato Bisque

Keto Tomato Bisque is a delicious and user-friendly dish. You can make a large stock of the bisque & freeze in smaller portionas that of the soup. Bisque only differs from tomato soup in consistency. Soup only uses chicken/vegetable broth & is relatively thinner as compared to the bisque which uses cream to make it rich and thicker. Keto Tomato Bisque is a yummy, healthy & cozy dish for the cold nights of winter.

EQUIPMENT:

  • A saucepan/pot

INGREDIENT:

  • Tomatoes, 794 g
  • Broth of chicken, 411 grams
  • Four cloves of garlic.
  • 2 g of basil (fresh)
  • Celery stalks, 2
  • One-fourth tsp of Black peppercorn powder.
  • Seven grams of thyme leaves.
  • An onion, large.
  • Heavy cream, a cup.
  • Two tbsps of oil(olives)
  • Half a tablespoon of salt

INGREDIENT DIRECTIVES:

BROTH:
You may use any type of broth like chicken, vegetable, or bone broth. Use low-sodium homemade/commercial broth or the regular one with less added salt.
TOMATOES:
You have the open choice to use which types of tomatoes you may easily get like Fresh diced tomatoes, or canned (crushed, whole peeled, diced, or fire-roasted) tomatoes.
CREAM:
Use cream (heavy) or half & half to have a strong & rich creamy feel. Regular milk is too thin to use here.
ONIONS, GARLIC, AND CELERY:
These veggies give the classic aroma to our bisque. Fresh garlic always works better but you may use the minced & jarred one.
Oil: We have to saute the veggies using a little oil of avocado/olive or some butter on low heat. Slice the celery & dice the onions.
HERBS:
You have the option to choose the combo of herbs according to your choice. You may use two or three of any fresh/ dried herbs. Italian seasoning also tastes great. If you are using dry herbs then add a teaspoon instead of a tablespoon which was in the case of fresh herbs.

INSTRUCTIONS:

  1. Place the pot over a normal flame.
  2. Pour the oil of olives & wait for it to heat up.
  3. At this point, include onion & celery and cook till onion becomes translucent.
  4. Now add the minced garlic and cook till it gives the aroma.
  5. Include the basil, chicken broth, thyme, and tomatoes.
  6. If you are using whole peeled tomatoes then mash them well before & then add the broth.
  7. Wait for the soup to boil then reduce it on slow flame for a one-fourth of an hour.
  8. You have to blend the tender veggies to have a paste-like soup.
  9. Now. include the cream (heavy) along with seasonings. Adjust them to taste.
  10. Garnish with cream/or basil leaves as you like.

TIPS:

Use the immersion blender with high speed to have your work done in a little time.
Never cover the soup while simmering. It will speed down the water evaporation.
use extra cream if you want the soup to be less spicy or less salty.

It is the best part that you prepare a large batch & store it in smaller portions using the freezer. Defrost a portion, warm it up & use it whenever you want.

REHEAT:
It is better to warm it up using the stovetop while stirring continuously in between.
