INGREDIENT NOTES AND THEIR SUBSTITUTIONS:

CHEESE WRAPS:

  • We use cheese wraps to keep these roll-ups low in carbohydrates while adding protein and a rich cheesy flavor. You can also use mozzarella, cheddar, provolone, Parmesan cheese wraps, or homemade cheese wraps.

FETA CHEESE:

  • We use feta cheese to give these roll-ups a tangy, salty Mediterranean taste and creamy texture. Instead, you can use goat cheese, ricotta salata, cotija cheese, or extra mozzarella.

FRESH MOZZARELLA:

  • Fresh mozzarella adds a mild flavor and creamy, melty texture to the filling. Alternatively, you can use provolone, Havarti, Monterey Jack, or burrata.

BABY SPINACH:

  • Baby spinach adds freshness, nutrients, and a vibrant green color to the roll-ups.

CUCUMBER:

  • Cucumber provides a crisp, refreshing crunch that balances the creamy ingredients.

CHERRY TOMATOES:

  • Cherry tomatoes make the roll-ups juicy and naturally sweet. Alternatively, you can use Roma tomatoes, grape tomatoes, or chopped sun-dried tomatoes.

FRESH HERBS:

  • Fresh parsley and basil bring bright, aromatic flavors to the roll-ups. You may also use dill, mint, cilantro, or fresh oregano.

LEMON JUICE:

  • Fresh lemon juice adds brightness and balances the richness of the cheese. As a substitute, you can use lime juice or red wine vinegar.

INSTRUCTIONS:

  1. Rinse and cut the herbs, cucumber, olives, roasted peppers, and tomatoes.
  2. Completely dry each vegetable.
  3. Stir the black pepper, cucumber, olive oil, tomatoes, lemon juice, roasted peppers, garlic powder, olives, oregano, parsley, and basil in a dish.

  5. Distribute almost two tbsp. of hummus uniformly on all the cheese wraps.
  6. Garnish the hummus surface with feta cheese and include slices of fresh mozzarella.
  7. Add the baby spinach as a garnish and uniformly spread the veggie mixture on all the wraps.
  8. Tightly roll the cheese wrap in a log.
  9. Chill for almost fifteen minutes, make the pinwheels, and then serve quickly.
