INGREDIENTS:

CHICKEN KOFTAS:

  • 500 g ground chicken
  • 2 tbsp Greek yogurt

  • ½ tsp black pepper
  • 2 tbsp almond flour

CURRY SAUCE:

  • 1½ tbsp olive oil
  • 1 onion
  • 1 tbsp ginger-garlic paste
  • 2 pureed tomatoes
  • ½ cup Greek yogurt
  • ¼ cup cooking cream
  • Chicken broth, one cup
  • One tsp cumin
  • Coriander, one tsp
  • ½ tsp paprika
  • ¼ tsp turmeric
  • 1 tbsp tomato paste
  • Black Pepper
  • ½ tsp garam masala
  • ¼ tsp chili powder
  • 1 tbsp lemon juice
  • Salt
  • 1 tbsp fresh parsley

INGREDIENT NOTES AND THEIR SUBSTITUTIONS:

GROUND CHICKEN:

  • We use ground chicken to make tender, juicy koftas. Ground turkey might be utilized as a replacement.

GREEK YOGURT:

  • Greek yogurt adds moisture and creaminess to the koftas and sauce. Plain unsweetened yogurt is a suitable substitute.

OLIVE OIL:

  • Olive oil adds Mediterranean-inspired flavor and healthy unsaturated fats. You can use avocado oil instead.

GINGER-GARLIC PASTE:

  • We use ginger-garlic paste to add aroma and flavor. Freshly grated ginger and minced garlic work well.

ALMOND FLOUR:

  • Almond flour helps bind the koftas while keeping them lower in carbohydrates. Breadcrumbs are another option.

TOMATOES:

  • Tomatoes provide a rich color and tangy flavor to the curry sauce. Canned crushed tomatoes can be used instead.

LIGHT COOKING CREAM:

  • Cream makes the sauce smooth and rich. You can use extra Greek yogurt for a lighter version.

CHICKEN BROTH:

  • Chicken broth adds savory flavor to the curry. Water might be utilized as a simple alternative.

LEMON JUICE:

  • Lemon juice balances the creamy sauce with fresh acidity. Lime juice works well as an alternative.

FRESH HERBS:

  • Parsley and coriander add freshness and aroma. You can use either herb according to your preference.

INSTRUCTIONS:

  1. Stir the kofta spices, ground chicken, olive oil, coriander, Greek yogurt, parsley, onion, and ginger-garlic paste.
  2. Make sixteen small balls from the mixture by shaping and chill for almost ten minutes.
  3. In a pan, we warm the olive oil and cook the koftas on every side.
  4. Bring them out of the pan and put them aside.
  5. Slowly cook the ginger-garlic paste and chopped onion in a similar pan.
  6. Include the pepper, tomato puree, salt, tomato paste, chili powder, cumin, turmeric, coriander, and paprika.
  7. Cook for almost seven minutes, slower the flame, and mix in the whisked Greek yogurt.
  8. Include the chicken broth and whisk till the sauce is smooth.
  9. Keep the koftas back in a pan, wrap, and slowly cook for only ten minutes till completely cooked.
  10. Whisk in the garam masala, light cream, and lemon juice.
  11. Slowly cook for an extra two minutes.
  12. Sprinkle the coriander or fresh parsley and serve warm.

TIPS:

  • Squeeze out extra moisture from the grated onion.
  • Do not mix the chicken too much maintain the tender texture of the koftas.
  • Chill the shaped koftas first and then cook to aid them in holding their shape.
  • Include the Greek yogurt on a low flame to avoid curdling.
  • Make sure the chicken becomes an inside temperature of 165°Fahrenheit.
