These Keto Buffalo Chicken Tenders are made with juicy, soft chicken that has been breaded, deep-fried, and then coated in buffalo sauce. When served with my Keto Ranch Dressing or Creamy Chive Blue Cheese, they are fantastic.

Crispy chicken tenders with breading have always been my favorite. It was the first item on the menu that caught my attention, even as a young child.

Pork rinds are not something I really enjoy, but when used as a low-carb breading alternative, you would never even notice they are there. These authentic keto buffalo chicken tenders are delicious!

INGREDIENTS

Nut-free keto breading in 1 batch
two huge eggs
1 1/2 pounds of tender-size chunks of boneless, skinless chicken breasts
Buffalo wing sauce, 1 cup (I use this brand)
1/4 cup butter (1 1/2 sticks)

INSTRUCTIONS

  1. Pork rinds, Parmesan cheese, garlic powder, Italian spice, and onion powder should all be combined and thoroughly mixed. On a big platter, spread the ingredients out into a thin layer.
  2. To beat the eggs, crack them into a small bowl. After coating them with the breading mixture, the chicken tenders are dipped in an egg wash. Verify that the breading mixture has completely covered both sides.
  3. Heat an skillet(high-sided) with ONE to TWO inches of oil. Use avocado oil, which I prefer to do.
  4. The breaded chicken tenders should be dropped into the heated oil after it starts to bubble slightly.
  5. About 3 minutes should be spent on each side of the fryer to achieve golden brown and crispy texture. To avoid having the breading come off, take care not to flip them too frequently.
    The chicken tenders should be taken out of the oil and placed on paper towels so that the extra fat may be absorbed.
  6. Take saucepan(small) and heat butter and buffalo wing sauce over medium heat in a small sauce pan. Cook the sauce just until the butter has melted and been incorporated. Put the sauce in a sizable mixing basin. Toss the tenders in the sauce and coat completely.

  4. Dip the chicken tenders in the egg mixture, and then dredge them into the panko mixture and coat well.
  5. Place them on parchment paper and bake for FIFTEEN to TWENTY minutes(crispy/golden brown). (Quick note – don’t flip them frequently).
  6. Meanwhile, let’s make the sauce, heat a saucepan over medium heat, add the butter and let it completely melt, add buffalo wing sauce and cook for a minute or two.
  7. Add the chicken tenders and mix until well coated with the sauce.
  8. Serve immediately!
